These are very simple and quick Welsh cakes fried in a pan. They will be perfect for people who don&#8217;t have an oven but enjoy homemade baked goods. The fried cakes are served warm &#8211; e.g., for afternoon tea or breakfast, and for me, they are a combination of shortbread cookies and pancakes. They taste great and are not difficult to make. don&#8217;t want to turn on the oven, or you don&#8217;t have access to one. In such a situation, you can make simple pan-fried cakes. Yes, yes &#8211; fried!<\/p>\n\n\n\n<p>This is a recipe from Welsh cuisine, and I must say, it&#8217;s great.<\/p>\n\n\n\n<p>I was in Wales once, and I must say, it&#8217;s beautiful, but their language made the biggest impression on me. We looked at all the signs written in Welsh and English and tried to twist our tongues reading the Welsh version :) I&#8217;m telling you, it was great fun.<\/p>\n\n\n\n<p>But back to Welsh cakes. Most often, they are eaten warm during afternoon tea &#8211; exactly teatime. If you don&#8217;t have any, you can briefly blend regular sugar to make it finer. As a last resort, you can use powdered sugar. Besides sugar, we use regular wheat flour here &#8211; it can be cake flour type 450 or 500.<\/p>\n\n\n\n<p>These cakes are prepared with two fats &#8211; butter and lard. Both butter and lard should be well chilled and added to the flour in pieces. You can mix them with the flour or rub them in with your fingers like a crumble. Lard gives the cakes greater softness, so it&#8217;s better not to replace it with butter. Ultimately, you can use vegetable shortening instead, but I recommend lard more.<\/p>\n\n\n\n<p>The Welsh also add small raisins called currants to their fried cakes. Such raisins are not very popular here and may be difficult to find. You can use regular sultana raisins instead &#8211; I recommend chopping them slightly so they are not too large. My children are not fond of raisins, so I used dried cranberries instead. I didn&#8217;t know what &#8220;mace&#8221; was, so I searched the internet and it turned out to be powdered nutmeg flowers. I haven&#8217;t seen such a spice anywhere in Poland, so I used a little ground nutmeg instead. It&#8217;s not the same, but oh well &#8211; it&#8217;s difficult.<\/p>\n\n\n\n<p>The prepared dough for the cakes should be chilled in the refrigerator &#8211; about half an hour is enough.<\/p>\n\n\n\n<p>Roll out the dough into a flat circle and cut out rounds &#8211; I cut them out with a 6 cm diameter cutter and got 28 cakes. I didn&#8217;t grease it additionally with fat, but you can grease the pan with a little melted butter.<\/p>\n\n\n\n<p>Fry the cakes over low\/medium heat for about 3 minutes on one side &#8211; be careful not to burn them.
