For the cake to be super soft, fluffy, and light after baking, you need to cream the butter and sugar very well. To do this, mix soft butter with sugar (I recommend powdered sugar) on high speed for several minutes &#8211; up to 10 minutes. Sift the flour through a sieve &#8211; this ensures better aeration and additionally contributes to the fluffiness of the cake. And finally &#8211; egg whites, or more precisely, whipped egg whites &#8211; at the end, add the whipped egg whites to the batter and gently mix. I used only egg whites here because I wanted to get nice colors &#8211; so if you happen to have unused egg whites, make such a bundt cake with just egg whites. Then, after adding the flour, mix the batter briefly and on low speed. Mixing the batter with flour for too long can cause the cake to lose its fluffiness and become tough!
