How to make apple muffins step by step
Step 1 – Prepare the apple filling
Peel the apples, cut them into quarters, remove the cores, and cut the fruit into smaller pieces.

Transfer the apples to a saucepan, add the remaining filling ingredients, and cook over low heat until the fruit softens slightly.

1 tablespoon lemon juice,
20 g all-purpose flour,
approx. 40-60 ml water
Let the apples cool
Step 2 – Preparing the muffin batter
Rozgrzej piekarnik do 180 stopni (góra/dół) lub 170 stopni (termoobieg).
Prepare a muffin tin – I lined mine with tall paper liners.
In a large bowl, mix the dry ingredients for the muffins – simply stir them together with a spoon.
225 g wheat flour,
2 teaspoon baking powder,
0.5 teaspoon salt,
0.5 teaspoon cinnamon,
¼ teaspoon nutmeg,
150 g sugar
In another bowl, mix the oil with the egg using a fork.
120 ml oil,
1 egg
Add the oil mixture to the dry ingredients and stir with a spoon – you will get a thick, lumpy batter.
Gradually add the milk (I used 150 ml) and stir until you get a smooth, medium-thick batter.

Peel the apple, remove the core, and cut the fruit into small pieces.

Add the apple to the batter and mix everything together.
Spoon the batter into the prepared paper liners, filling each up to a maximum of 2/3 full – I got 11 muffins this way.
Spoon the cooled apple filling on top – about 1 heaping tablespoon per muffin.
Step 3 – Prepare the crumble for the muffins
Place the ingredients for the crumble into a bowl.
75 g all-purpose flour,
50 g sugar,
50 g butter
Rub them together with your fingers, or mash with a fork until you get crumbly pieces.
Sprinkle the crumble over the tops of the muffins.
Step 4 – Baking the apple muffins
Place the muffins in the preheated oven and bake for about 20–25 minutes, until a toothpick inserted into the center comes out clean.
After baking, let them cool slightly, and you can serve them while still warm.
