How to make brownie cookies with fruit in gel step by step
Step 1 - prepare the cookie dough
Break the chocolate into pieces and melt it together with the butter - I heat it for about 1 minute in the microwave.
100 g dark chocolate, 40 g butter
Thoroughly mix the chocolate with butter until a uniform mass is formed and set aside to cool.
Combine the flour with baking powder.
35 g all-purpose flour, 1/4 teaspoon baking powder
Blend the eggs with sugar until a thick and fluffy mass is formed - I blend for several minutes with a mixer on high speed.
2 eggs, 100 g sugar
Add the cooled chocolate to the beaten eggs.
Blend briefly - just until combined.
Add the flour and blend briefly.
Place the cookie dough in the refrigerator for about 2 hours - it needs to thicken.
Step 2 - preparing the cookies
Preheat the oven to 180 degrees Celsius - in top/bottom heat mode.
Remove the chilled dough from the refrigerator and scoop portions of dough with a teaspoon (I first dip the spoon in slightly warm water).
Using a second spoon, place the cookies onto a large baking sheet lined with parchment paper.
Arrange the cookies with slight gaps, as they will spread during baking.
Bake the brownie cookies for about 11-15 minutes.
After baking, cool them before filling with cream.
Step 3 - prepare the cookie filling
Mix the mascarpone together with the heavy cream and sugar until a thick and very fluffy mixture is formed.
100 g mascarpone cheese, 100 ml heavy cream, 1 tablespoon powdered sugar
For a nicer appearance of the cookies, I recommend transferring the cream to a piping bag, preferably with a nozzle attached - I used a Wilton 1M star tip.
Decorate half of the cookies with the cream.
Apply cherries and currants in gel onto the cream.

Finally, cover the cookies with a second cookie.
