How to make carrot cake with pistachios step by step
Step 1 - preparations
Preheat the oven to 170℃ in convection mode or 180℃ (top/bottom heat mode).
Line the baking pan with parchment paper or grease it with butter and dust with flour.
Peel the carrots and grate them on a fine grater.

Chop the pistachios.
approx 70 g pistachios
Mix the flour with baking powder and cinnamon.
150 g all-purpose flour,
2 teaspoons baking powder,
1 teaspoon cinnamon
Step 2 - preparing the carrot cake batter
In a large bowl, combine sugar, Greek yogurt, eggs, and oil - mix with a whisk until combined.
2 eggs,
100 g sugar,
120 ml Greek yogurt,
80 ml oil
Add the mixed flour to the bowl and stir.
Add the grated carrots and pistachios to the bowl and mix with a spoon.
Transfer the batter to the prepared pan.
Step 3 - baking the carrot cake with pistachios
Place the pan with the batter into the preheated oven and bake for about 50 minutes - until a wooden skewer comes out clean.
After baking, let the cake cool.
Step 4 - preparing the cottage cheese topping
Transfer the cottage cheese to a bowl, add maple syrup and mix.
150 g cream cheese,
approx. 2 tablespoons maple syrup
Spread the cottage cheese mixture over the top of the cake.
Finally, you can additionally sprinkle the cake with chopped nuts.
