How to make cracked lemon cookies step by step

Step 1 - preparing the dough for lemon cookies

• Mix the flour with the baking powder.
  300 g all-purpose flour, 1 teaspoon baking powder
• Transfer the butter to a larger bowl, add powdered sugar and zest from one lemon.

• Whisk everything together until fluffy and light.
  
• Add the egg to the butter mixture and whisk briefly.

• Add lemon juice and whisk briefly.

• If you want the cookies to have a stronger yellow color, you can add a touch of yellow food coloring (this is not necessary!).

• Add flour in portions and mix only until combined.
  
• Place the bowl with the dough in the refrigerator for about an hour.

Step 2 - preparing the lemon cookies

• Add the sugars separately into two bowls.

• Scoop portions of dough with a teaspoon and roll them into balls, roughly the size of a walnut, in your hands.
  
• First, coat the ball in granulated sugar.
  
• Then coat it in powdered sugar.
  
• Arrange the cookies on a large baking sheet - leave slight gaps between them, as they will spread slightly during baking.
  

Step 3 - baking lemon cookies

• Place the baking sheet in the oven preheated to 180℃ (top/bottom heat) and bake for about 10-12 minutes - I baked the cookies on two sheets.
• Immediately after baking, the cookies will still be very soft, so don't remove them right away; let them cool!
