How to make Torta di Noci walnut cake step by step
Step 1 - preparations
Grease the baking pan with butter and dust with flour or breadcrumbs - you can also line it with baking paper.
Preheat the oven to 180 ℃ (top/bottom heat) or 170 ℃ (fan-assisted).
Grind the walnuts - some slightly larger pieces may remain, which will add crunchiness.
140 g walnuts
Melt the chocolate (e.g., in a bain-marie) and let it cool.

Step 2 - preparing the nut dough
Transfer the egg yolks to a bowl with sugar and beat them at high speed until pale and fluffy.

Pour the oil into the egg yolks and mix briefly.

Add the cooled chocolate and mix briefly.

Mix the flour with the baking powder.

Add the flour to the bowl with the dough and mix on low speed - just until combined.
Add the ground nuts and mix briefly - the mixture will be thick.
Step 3 - preparing the egg whites
Whisk the egg whites on high speed until you get a thick, white, and stable foam.

Add about half of the egg white foam to the dough and gently mix with a spoon.
Add the rest of the foam and gently mix.
Step 4 - baking the cake
Transfer the dough to the prepared mold and place in the oven - bake for about 30 minutes - until a skewer comes out clean.
After baking, cool the cake, and before serving, sprinkle with powdered sugar.
