How to make lemon muffins with crumble step by step
Step 1 - preparations
Preheat the oven to 180℃.
Prepare a muffin tin, or cupcake liners - I put the batter into tall "tulip" type cupcake liners and got 15 pieces.
Step 2 - preparing the muffin batter
Transfer the wet ingredients for the batter to a larger bowl and add sugar.
250 g mascarpone cheese, 150 g Greek yogurt, 2 eggs, approx. 50 ml lemon juice, 150 g sugar
Mix everything together with a spoon or a kitchen whisk.
Add flour and baking powder.
200 g all-purpose flour, 1 teaspoon baking powder
Mix.
Fill the cupcake liners with batter - to about 2/3 of their height.
If using fruit, place it on top of the muffins.

Step 3 - preparing the crumble topping
Pour flour and sugar into a bowl, add melted butter.
100 g all-purpose flour, 60 g sugar, 50 g butter
Mix the ingredients with a fork to obtain a crumbly mixture.
Sprinkle the crumble topping over the muffins.
Step 4 - baking the muffins
Place the muffin tin into the hot oven and bake for about 20-30 minutes - until a dry stick comes out.
After baking, let the muffins cool slightly.
You can additionally sprinkle them with powdered sugar or drizzle with icing.
