Whip the egg whites with sugar into a thick and fluffy mass.

Transfer the butter to a bowl and beat on high speed for about 10 minutes - until it becomes white and fluffier.

Gradually add the milk with sugar and powdered milk to the beaten butter - until all is used.

How to make chocolate cream
Heat the heavy cream, add the broken chocolate to it and mix until completely dissolved.

Set aside the chocolate to cool.
Lightly mix the mascarpone cheese, add the cooled chocolate and mix thoroughly together.

How to assemble the Minotaur cake
Soak the sponge cake with water and sugar (or sweetened tea).

Spread the top with dulce de leche (if using).

Spread the milk cream and distribute it evenly over the entire cake.
Layer the chocolate cream on top of the milk cream.
Refrigerate the cake for 2-3 hours to chill.
It's best to take the cake out of the refrigerator a little earlier (about half an hour) before serving, so that the creams soften slightly and become more delicate.
Before serving, you can additionally sprinkle the cake with bitter cocoa.
