How to make pistachio and white chocolate cookies step by step
Step 1 - preparations
Turn on the oven to convection heating at 170℃.
Line two large baking sheets from the oven with parchment paper.
Roughly chop the pistachios - some of them can remain whole.
100 g pistachios
Chop the white chocolate into smaller pieces.
100 g white chocolate
Mix together the flour, baking soda, and salt.
300 g wheat flour, ½ teaspoon baking soda, ½ teaspoon salt
Melt the butter - e.g., in the microwave and let it cool slightly.
Step 2 - preparing the cookie dough
Pour the melted butter into a larger bowl, add sugar, and mix with a spoon until combined
150 g sugar, 170 g butter
Add the egg and egg yolk and mix.
1 egg, 1 egg yolk
Pour in the mixed flour and stir - the dough will be thick.
Add pistachios and chocolate to the bowl - mix thoroughly.
Scoop portions of dough with a large spoon (I used an ice cream scoop).
Arrange the cookies on the baking sheet, leaving slight gaps - I got 16 cookies.
Step 3 - baking pistachio and chocolate cookies
Place the baking sheets in the preheated oven - I put one closer to the top and the other closer to the bottom, leaving some space between them, and bake for about 8-9 minutes.
After this time, swap the baking sheets and bake for another 5-7 minutes - until they are nicely browned.
Remove the baked cookies with the baking sheets from the oven and leave them to cool slightly - during this time they will stop being very soft and will become crispy.
