How to make pistachio palmiers step by step
Step 1 - preparations
Take the puff pastry out of the fridge about 20-30 minutes before preparing the cookies, to let it warm up slightly.
approx. 300 g puff pastry
Preheat the oven to 200 degrees (convection) or 210 degrees (top/bottom heat mode).
Step 2 - preparing the cookies
Roll out the dough on the kitchen counter.
Spoon the pistachio cream in a few places - a teaspoon of cream per portion is enough.
approx. 50-55 g pistachio cream
Spread the pistachio cream over the top of the dough, leaving empty margins on the narrower sides.
Fold the dough from the narrower sides to about 1/4 of the dough's length.
Fold the dough again so that it almost reaches the center.
Finally, fold one part over the other.
Cut the dough with a sharp knife into slices about 1-1.5 cm wide - I got 12 cookies.
You can now lightly coat each cookie additionally in sugar.

Arrange the cookies on a baking sheet lined with parchment paper - cut side up.
Arrange the cookies with slight gaps, as they will rise slightly during baking.
Step 3 - baking the cookies
Place the baking sheet with cookies into the hot oven - on the middle rack and bake for about 20 minutes - until the cookies rise and turn golden brown.
