In a large bowl, mix the dry ingredients: flour, sugar, cocoa, baking powder, and baking soda.
200 g wheat flour, 200 g sugar, 50 g bitter cocoa, 2 teaspoons baking powder, 0.5 teaspoons baking soda
Add oil, egg, and milk - mix with a spoon or whisk.
80 ml oil, 1 egg, 180 ml milk
Pour in the hot water with coffee and mix thoroughly.
180 ml boiling water
Step 2 - preparing the cake baking mold
Grease a baking mold with a diameter of about 22 cm with butter and sprinkle with flour - you can also use breadcrumbs or semolina.
Pour the batter.
Step 3 - baking the chocolate cake
Place the mold with the batter into an oven preheated to 180 degrees Celsius in top/bottom heat mode and bake for about 40 minutes - until a dry stick. A stick inserted into the center of the cake must come out dry and not covered with wet batter. If the stick is sticky, extend the baking time a bit - you can also change the oven setting to bottom heat only.
After baking, cool the chocolate cake.
Step 4 - preparing chocolate ganache for the cake
To prepare the ganache, heat the heavy cream in a saucepan.
250 ml heavy cream
When it boils, remove it from the heat and add the broken chocolate.
250 g chocolate
Wait about 5 minutes, then mix thoroughly - until the chocolate is well dissolved and forms a uniform and smooth mass.
Wait for the chocolate to cool and thicken.
Spread it over the top and sides of the cake.
Uwagi
For a long time, I've been significantly reducing the sugar used in recipes and I'm used to less sweet cakes. This recipe uses a lot of bitter cocoa, so the cake is not very sweet. You can add half a cup (100 g) more sugar to the cake - or to taste, if you prefer sweeter cakes. What instead of ganache? You can make a simple chocolate glaze - just heat 50 ml of heavy cream and when hot, add broken milk chocolate to it - mix, cool, and when it thickens, pour it over the cake. I prepared such a lighter chocolate glaze for the video.
