How to make mini ricotta donuts step-by-step
Step 1 - preparation
Zest one orange and squeeze the juice from one half.
Pour the oil into a pot and heat it to about 180°C.

Step 2 - preparing the dough for mini doughnuts
Mix together ricotta, eggs, orange zest, and juice.

250 g ricotta cheese,
2 eggs
Add flour, baking powder, and sugar.
130 g all-purpose flour,
2 tablespoons sugar,
2 łyżeczki baking powder
Mix into a rather thick batter.
Step 3 - frying mini doughnuts
Spoon heaped portions of the batter into the hot oil (use a second spoon to help release the batter).
Fry for about 1-2 minutes and then turn the doughnuts to the other side.
Fry on the other side for about a minute - you can check with a toothpick if the dough is cooked through in the middle.
Remove the doughnuts onto a paper towel to drain excess fat.
Coat or sprinkle the doughnuts with sugar.
