Add eggs one by one to the cooled butter, mixing thoroughly after each addition.

Add vanilla - if using, and mix.
0.5 teaspoon vanilla extract
Pour the wet ingredients into the dry ingredients.
Mix briefly with a mixer, or stir with a spoon - the mixture will be quite thick.
Chill the cookie dough in the refrigerator for an hour to firm it up.
Step 3 - forming cinnamon cookies
Scoop heaped portions of dough with a teaspoon.
Roll them into balls in your hands - mine were the size of a large walnut.
In a bowl, mix sugar and cinnamon together and coat each ball.
50 g sugar, 1 teaspoon cinnamon
Arrange the cookies on a large baking sheet lined with parchment paper - I got 27 cookies and baked some of them on a second sheet.
Bake in a preheated oven for about 12 minutes.
Immediately after baking, the cookies are still very soft - do not remove them from the baking sheet right away, but let them cool for a moment. Then they will become crispy on top.
