Grease the baking pan with butter and dust with flour, or line with baking paper.
Preheat the oven to 170℃ (fan-assisted) or 180℃ (top/bottom heat mode).
Sift together flour, cocoa, and baking powder through a fine sieve.
250 g wheat flour, 30 g cocoa, 2 teaspoons baking powder
Step 2 - preparing the chocolate cake
Transfer the wet ingredients for the cake and sugar to a large bowl.
4 eggs, 250 g sugar, 200 ml milk, 160 ml oil
Mix everything together with a kitchen whisk or a spoon.
Add the sifted flour with cocoa and mix until combined.
Pour the batter into the prepared pan.
Place the cake in the preheated oven and bake for about an hour - until a dry skewer comes out clean.
After baking, let the cake cool completely.
Step 3 - preparing the chocolate cream
While the cake is cooling, heat the heavy cream in a saucepan until hot, then add the broken chocolate and mix thoroughly until you get a smooth chocolate mass. Let it cool.
250 ml heavy cream, 200 g dark chocolate
To the cooled chocolate mixture, add mascarpone cheese and blend briefly until just combined (you can also mix the cream with a whisk if you don't want to use a mixer).
250 g mascarpone cheese
Taste the cream and if it's not sweet enough for you, add powdered sugar in portions and mix.
powdered sugar
Step 4 - assembling the chocolate cake
Cut the chocolate cake into two layers.
Place the bottom layer on a plate and secure the baking pan ring around it.
Spread the chocolate cream over the cake and level it.
Carefully place the top layer of chocolate cake on the cream.
Refrigerate the cake for at least an hour for the cream to set.
Step 5 - preparing the chocolate glaze
Break the chocolate into pieces, add the heavy cream to it and heat together until melted - I heated them together for 30 seconds in the microwave. Mix thoroughly.
100 g milk chocolate, approx 30 ml heavy cream
Take the cake out of the fridge, remove the ring and spread the top of the cake with chocolate glaze.
