How to make Italian ricotta cake
In a bowl, mix together ricotta and sugar.
250 g ricotta cheese, 200 g sugar
Add eggs and mix.

Add lemon juice and lemon zest - mix.

Pour in olive oil and mix.

Sift flour, almonds, and baking soda into the bowl through a sieve.
150 g wheat flour - all-purpose, 50 g ground almonds, 1 teaspoon baking soda
Mix everything briefly with a mixer or spoon.
Transfer the batter to the prepared baking pan.
Sprinkle the top of the cake with almonds.
approx. 30-50 g almonds
Bake the almond cake in an oven preheated to 180 degrees Celsius (top/bottom heat mode) for about 45-50 minutes - until a toothpick comes out clean.
After baking, sprinkle the cake with powdered sugar.
