How to make Italian ricotta cake

  • In a bowl, mix together ricotta and sugar.

What is almond ricotta cake?

Today I invite you to a very simple and quick almond cake prepared with ricotta cheese and refreshing lemon. A similar cake was made on Instagram by Pasta Queen and I was immediately intrigued by this recipe. Unfortunately, the author did not provide the exact recipe for this version of the cake, so I had to experiment a bit myself. On her YouTube channel, there is a recipe for lemon ricotta cake, but it does not contain ground almonds, unlike the Instagram recipe. That’s why I present my version of this extraordinary cake here.

Origin of almond ricotta cake

This almond cake comes from Italy and is often served not only for dessert, but also for breakfast with coffee. The cake is so quick to prepare that you can make it in the morning and eat it warm for a tasty and nutritious breakfast.

Ingredients needed to prepare almond ricotta cake

To prepare this cake, you will need a few basic ingredients that are easily available in larger supermarkets or discount stores. The base of the cake is, of course, Italian ricotta cheese.

Main ingredients: almonds and ricotta

Ricotta is a soft, unripened curd cheese originating from Italy. This cheese is not yet as popular as another Italian cheese – mascarpone, so you may have trouble buying it in smaller stores. However, you can easily get it in larger supermarkets, and it is also very often available at Lidl. I rarely come across it at Biedronka, unless it’s Italian week.

Almonds needed for this cake come in two forms here. Firstly, ground almonds (also called almond flour) and chopped almonds or almond flakes for sprinkling on top of the cake. You can make ground almonds yourself – just finely grind the almonds. If you use blanched almonds (without skin), the cake will have a nice light color. But nothing will happen if you use unblanched ground almonds.

Additional ingredients for almond cake

Besides ricotta cheese and almonds, you will need sugar for the cake. Pasta Queen recommends brown sugar here, I chose cane sugar. Brown sugar is regular white sugar that is colored with caramel. You can also use regular sugar if you don’t have cane or brown sugar.

For a refreshing taste, lemon is added to the cake. I grated the zest from one very large lemon – if you have smaller fruits, grate the zest from two. In addition, squeeze the juice from half a lemon and add it to the cake as well.

Baking soda – the author prepared the cake with baking soda – 1 teaspoon is needed here. If you don’t have baking soda, you can replace it with regular baking powder – use 2 slightly heaped teaspoons of it. Baking soda works much more strongly than baking powder, which is why more of it is needed.

How to prepare almond ricotta cake – tips

As I mentioned earlier, you don’t even need a mixer to prepare this almond ricotta cake. However, you will need a large bowl, something to mix with, a sieve, and a citrus juicer. Start by thoroughly mixing the ricotta cheese with sugar – once you have a uniform mass, add the grated lemon zest and lemon juice to the bowl, add two eggs, a little olive oil, and mix everything together. Sift wheat flour (I used cake flour type 450 here), ground almonds, and baking soda into the bowl. Mix everything together and the cake is ready! Pour the batter into a prepared baking pan about 22 cm in diameter, sprinkle chopped almonds or almond flakes on top, and bake.

How to bake the perfect almond ricotta cake?

Bake the almond ricotta cake in an oven preheated to 180 degrees Celsius (top/bottom heat mode). You can also bake with convection, but then lower the baking temperature to 170 degrees Celsius. Bake the cake for about 45-50 minutes – until a dry stick comes out clean. The cake may have a slightly sunken center during baking, but if a stick inserted into the center comes out clean, the cake is baked. You can serve the cake after it has cooled slightly. Then I recommend sprinkling it with powdered sugar on top.

How many calories does almond ricotta cake have?

In the recipe, I stated that 100 g of almond cake has a little over 360 kcal. However, when dividing the cake into 12 roughly equal pieces, each of them will have about 213 calories (carbohydrates 26 g, fat 8 g, protein 6 g), so a slice of this cake with coffee is not such a terribly caloric cake. You can eat it without guilt!

How to store Italian almond cake?

Ricotta cheese cake can be stored at room temperature. Thanks to the cheese and ground almonds, the cake is nicely moist and doesn’t dry out. But it’s good to keep it covered or in an airtight container to ensure its freshness for as long as possible. You can also freeze the cake. In that case, cool it completely, wrap it in foil, or transfer it to a thick freezer bag and put it in the freezer. It can stay there for about 3 months.
