Yeast Poppy Seed Buns Recipe Step by Step
If you like traditional Polish yeast buns with poppy seeds and icing, you absolutely must make them yourself at home! Such poppy seed yeast rolls taste incredibly delicious when still warm – eat them with coffee or tea :)

- 200 g poppy seeds (ground)
- 70 g sugar (1/3 cup – or to taste)
- 2 eggs (I used size L)
- nuts (raisins, orange peel – as desired)

- 100 g powdered sugar (2/3 cup)
- 2-3 tablespoons milk (to consistency)

How to make yeast dough for poppy seed buns
- Crumble the yeast, add a teaspoon of sugar to it and mix lightly, pour in warm milk, mix thoroughly.15 g yeast, 1 teaspoon sugar, 120 ml milk
- Cover the cup with yeast with a cloth and set aside for about 20 minutes for them to start working – they should thicken and rise.
- In the meantime, prepare the rest of the dough ingredients – pour flour into a large bowl, add oil, the rest of the sugar, and an egg.300 g wheat flour – all-purpose, 50 g sugar, 1 egg, 3 tablespoons oil
- Pour in the yeast starter and knead an elastic dough.
- Cover the bowl with the dough with a towel and set aside in a warm place for about an hour to rise.
How to make poppy seed filling for poppy seed buns
- Pour boiling water over the ground poppy seeds – just enough to cover them and set aside for half an hour.200 g poppy seeds
- After this time, drain the water – it is best to line a fine sieve with a muslin cloth or several layers of paper towels and pour the poppy seeds along with the water through this sieve.
- Add sugar and eggs to the drained poppy seeds – mix.70 g sugar, 2 eggs
- You can now add your favorite additions to the poppy seeds – chopped nuts, raisins, orange peel. I like to add a few drops of almond extract to it.nuts
How to make poppy seed buns
- Take the risen dough out onto a lightly floured surface and knead briefly.
- Roll out the dough into a flat rectangle – with a maximum thickness of 1 cm.
- Spread the poppy seed filling over the top of the dough and roll the dough into a log along the longer side.
- Cut the dough into 8 pieces.
- Arrange the buns on a baking sheet – leave slight gaps between them.
- Cover the buns with a kitchen towel and set aside for about 30 minutes to puff up.
- In the meantime, preheat the oven to 170 degrees (convection mode).
- Bake the buns for about 20 minutes – until golden brown, and let them cool after baking.
- Mix the powdered sugar for the icing with milk and spread the resulting icing over the buns.100 g powdered sugar, 2-3 tablespoons milk

Poppy Seed Yeast Rolls – Notes
I don’t know how it happened that poppy seed buns haven’t appeared on my blog until now!
During high school and university, I practically didn’t eat any other yeast rolls!
But it’s a fact that blog life forces you to constantly look for something new. And bake something new :)
I get inspired by various foreign recipes, and I completely forgot about traditional Polish poppy seed yeast rolls.
A bit shameful, but luckily I’m making up for that mistake now!
How to Make Yeast Poppy Seed Buns – Tips
It’s worth starting the preparation of yeast rolls with the yeast dough, as it needs time to be properly kneaded and rise.
I prepared the yeast dough for the buns using a basic recipe – without any frills or complications.
As usual, I recommend kneading it with a mixer with a dough hook or spiral attachments. Why bother kneading by hand when a stand mixer can do it for us :)
What Poppy Seeds for Poppy Seed Buns?
For the buns, you will, of course, need poppy seeds – it’s best to use pre-ground ones – this will save you a lot of time and cleaning.
Such poppy seeds just need to be covered with hot water and left for half an hour, and they will be perfectly suitable for eating.
If you have unground poppy seeds, first cover them with boiling water, and then you still need to grind them – preferably twice.
If you don’t have time or inclination to fuss with poppy seeds, use ready-made poppy seed filling.
To the poppy seeds, you can add chopped nuts, almonds, raisins, orange peel, cranberries, and whatever else you like :) The buns will be even more delicious thanks to the dried fruits!
After baking, drizzle the buns with icing – just mix powdered sugar with a little milk or heavy cream.
They are best when still slightly warm :)
These yeast rolls are so delicious, light, and fluffy, they disappear in no time!
