- 300 g wheat flour – all-purpose (- 2 cups)
- 150 g sugar (- 3/4 cup)
- 3/4 teaspoon baking soda (- or 2.5 teaspoons baking powder)
- 3 bananas (- ripe – mine weighed 380 g)
- 50 g buttermilk (- 1/4 cup)
- 2 eggs (- size L)
- 6 tablespoons oil (- about 40 g)

How to make banana bread
- Peel the bananas and transfer to a bowl – mash with a fork.3 bananas
- Add eggs, buttermilk, and oil to the bananas – mix with a spoon.2 eggs, 6 tablespoons oil , 50 g buttermilk
- In a second bowl, mix the dry ingredients.300 g wheat flour – all-purpose, 150 g sugar, 3/4 teaspoon baking soda
- Combine the dry and wet ingredients with a spoon.
- Transfer the batter to the prepared pan.
- Bake at 180 degrees (top/bottom heat) for approximately 70 minutes – until a skewer comes out clean.
- After baking, cool the cake.

Banana bread – notes
This quick banana cake turns out soft and moist. It stays fresh for a long time and tastes delicious even after a few days. You can serve banana bread with coffee or tea as a dessert, but it also works great as a sweet breakfast. Such banana bread is a better breakfast choice than sweetened cereals – you must try it!

How to make quick banana bread – tips
For the perfect banana cake, you will, of course, need bananas – preferably very ripe ones, with brown skins. Such bananas are much more aromatic and sweet, and because they are brown and soft, they usually no longer find enthusiasts to eat them. Such bananas are best for sweet baked goods, smoothies, and ice cream.
Besides bananas, we add only basic ingredients to this banana cake – wheat flour, a little sugar, oil, eggs, and buttermilk (instead of buttermilk, you can also use natural yogurt or kefir). Bananas are quite heavy, and for the cake to rise nicely, I used baking soda. It is much stronger than baking powder, and cakes baked with soda rise more. If you don’t have soda, you can use baking powder, but you need to use about 3 times more than soda. For this banana cake, that would be about 2.5 teaspoons.

Can you make banana bread without a mixer?
As I wrote earlier, this is a banana cake without a mixer – so all you need is a spoon and two bowls. In one bowl, mash the bananas and add the wet ingredients. In the second bowl, mix the dry ingredients, which are then combined with the wet ones. Transfer the express banana cake prepared this way into an oblong baking pan and bake for about 70 minutes. I baked my banana cake in a 27 cm long pan.
It’s best to let banana bread cool for a while before eating, but there’s nothing stopping you from eating it warm :)
I’ll also tell you that if the cake sits for a while and you want to ‘refresh’ it, you can heat it in a toaster – it will be nicely warm and aromatic.
