Add sugar to a saucepan and add a tablespoon of water.
100 g sugar
Heat until the sugar dissolves and turns an amber color - be careful not to burn the caramel, as it will become bitter.
Meanwhile, heat the milk with heavy cream in a pot.
250 ml milk, 250 ml heavy cream
Pour some milk with cream into the prepared caramel - be careful, as the mixture will bubble up strongly and rise - so don't pour too much milk at once.
While stirring constantly, slowly pour in the rest of the milk until all the caramel combines with it.
Soak the gelatin in a little cold water, and when it swells, heat it briefly until it is liquid.
2 teaspoons gelatin
Add the gelatin to the caramel liquid and mix thoroughly.
Pour the mixture into glasses and set aside to cool.
Place the cooled panna cotta in the refrigerator to set.
Before serving, decorate it with whipped cream.
If you want to make nuts in caramel, make caramel as for panna cotta and add nuts to it.
