How to make chocolate ricotta cake step by step
Step 1 - preparations
Grease the baking pan with butter and sprinkle thoroughly with breadcrumbs or flour - you can also line it with baking paper instead.
Preheat the oven to 180 degrees Celsius (top-bottom mode) or 170 degrees Celsius (convection mode).
Step 2 - prepare the chocolate
Break the chocolate into pieces into a heatproof dish, add the butter in pieces and heat together for about 1.5-2 minutes in the microwave - until melted.
100 g chocolate, 170 g butter
Mix thoroughly together to form a smooth glaze and set aside for a moment.
Step 3 - prepare the chocolate cake batter
In a large bowl, add the dry ingredients - flour, sugar, cocoa, and baking powder - mix with a spoon.
190 g wheat flour - all-purpose, 40 g dark cocoa, 2 teaspoons baking powder, 300 g sugar
In a second bowl, thoroughly mix the eggs with the ricotta cheese.
3 eggs, 375 g ricotta cheese
Add the eggs with ricotta and the melted chocolate to the dry ingredients - mix until combined.
Transfer the batter to the prepared baking pan.
If desired, additionally sprinkle the top of the cake with chocolate chips or chopped chocolate.

Step 4 - bake the chocolate cake
Place the pan with the cake into the preheated oven and bake for about 40 minutes - until a wooden skewer comes out clean.
After baking, let the cake cool.
