Beat the egg with sugar until very fluffy and light.

Add the sifted flour and butter and mix gently.

Lightly grease the cookie mold with oil.
If you want to make your work easier, you can transfer the dough to a piping bag - it will be easier to apply.
Spoon the dough into the mold.
Place a small teaspoon of Nutella in the center of each cookie - if using, and cover it with a small amount of dough.

Put the mold with the cookies in the refrigerator for an hour.
After this time, bake the cookies in an oven preheated to 170 degrees (convection) or 180 degrees (top/bottom mode) for about 12-15 minutes - until a dry skewer comes out clean.
After baking, remove the cookies from the mold and cool them.
To make the glaze, break the chocolate and melt it in a double boiler (read my notes above the recipe if you don't know how to do this) and mix with oil.

Dip the cookies in chocolate and place them on a wire rack or baking paper and sprinkle with chopped nuts - if using.
