  • 50 g wheat flour – all-purpose (- 1/3 cup)
  • 1 tablespoon bitter cocoa
  • 0.5 teaspoon baking powder
  • 1 egg (- mine was size L)
  • 50 g sugar (- 1/4 cup)
  • 50 g butter (melted)
  • approx 50 g Nutella (or other chocolate-hazelnut spread – optional)
  • approx 100 g chocolate (- I used milk chocolate)
  • 1 teaspoon oil
  • nuts (- chopped, for sprinkling – optional)

How to make madeleine cookies step by step

  • Sift the flour with cocoa and baking powder through a sieve.

  • Beat the egg with sugar until very fluffy and light.

  • Add the sifted flour and butter and mix gently.

  • Lightly grease the cookie mold with oil.
  • If you want to make your work easier, you can transfer the dough to a piping bag – it will be easier to apply.

  • Spoon the dough into the mold.

  • Place a small teaspoon of Nutella in the center of each cookie – if using, and cover it with a small amount of dough.

  • Put the mold with the cookies in the refrigerator for an hour.
  • After this time, bake the cookies in an oven preheated to 170 degrees (convection) or 180 degrees (top/bottom mode) for about 12-15 minutes – until a dry skewer comes out clean.
  • After baking, remove the cookies from the mold and cool them.
  • To make the glaze, break the chocolate and melt it in a double boiler (read my notes above the recipe if you don’t know how to do this) and mix with oil.

  • Dip the cookies in chocolate and place them on a wire rack or baking paper and sprinkle with chopped nuts – if using.

Chocolate madeleines – notes

Madeleines are small cookies originating from French cuisine. The madeleine cookies themselves are made from very basic ingredients – flour, sugar, eggs, and butter. Their uniqueness comes from the baking method. These cookies are baked in a special mold where the indentations are shell-shaped – you can easily buy such a mold online. Just type “madeleine mold” into a search engine.

How to make madeleines?

Madeleine cookies are very simple and quick to make – you can see for yourself by watching my short video. I am convinced that these chocolate cookies will not cause anyone any difficulty and everyone can make them at home.

To make them, you must first sift wheat flour with bitter cocoa and a pinch of baking powder through a sieve. This step is important because sifted flour is lighter and better aerated – this makes the cookies fluffier and lighter.

The second step in preparing madeleines is to thoroughly mix the egg with sugar. You mix the egg until it is very thick and light. Mixing the egg with sugar should take a few minutes. Then you add the sifted dry ingredients and cooled butter to the bowl and only gently mix with a spoon or briefly mix on the lowest speed of the mixer.

Transfer the prepared dough to a madeleine mold and put it in the fridge. Yes, you read that right – put it in the fridge.

Why do we chill madeleine dough in the fridge?

It’s worth chilling the madeleines in the fridge before baking, because this makes them rise better during baking. The butter added to the dough cools down, and then at high baking temperatures, a more violent reaction occurs, and the dough rises more strongly. If you don’t have time to chill the dough, you can bake them right away. But I recommend chilling the madeleines if you can.

How long to bake chocolate madeleines?

Madeleine cookies are small, so their baking is quick. I baked my chocolate madeleines for about 13 minutes – I baked them with Nutella inside, so they baked a bit longer. If you’re not adding chocolate cream to the cookies, check after 12 minutes to see if they’re ready.

How to store chocolate madeleines?

Madeleine cookies are best stored in an airtight container to prevent them from drying out. Although, I have a feeling there won’t be much to store :) The recipe yields 12 chocolate cookies, so I think they’ll disappear before there’s a need to store them :) I’ll also add that if you drizzle the cookies with melted chocolate, the madeleines will stay fresh longer and dry out less. To make a chocolate glaze for the cookies, you need to melt chocolate in a double boiler and mix it with a little oil – I added a teaspoon of coconut oil to the chocolate. We add oil to the chocolate so that it’s not too hard after setting and doesn’t crack when eaten.

How to melt chocolate in a double boiler?

To melt chocolate in a double boiler, place a small pot with water to boil – pour water to about 1-2 cm high. On top, place a metal or heatproof bowl into which you put chopped chocolate and add a teaspoon of oil. As the water boils, it starts to steam and heats the bowl with the chocolate, causing it to melt. Stir the chocolate until it is nicely melted. Then you can dip the chocolate madeleines in it and set them aside until the chocolate cools.

How many calories do chocolate madeleines have? One cookie with a little Nutella, but without chocolate glaze, has less than 100 calories. If you add chocolate to the cookies, the calorie count increases to about 130 calories.
