Turn on the oven to heat to 170℃ (fan-forced) or 180℃ (top/bottom heat mode).
Step 2 - preparing the coffee banana cake
Transfer butter and sugar to a large bowl and start mixing.
100 g butter, 200 g powdered sugar
Beat for about 3 minutes on high speed with a mixer until the mixture becomes light in color and noticeably fluffy.
Then add one egg at a time to the bowl and one tablespoon of mixed flour - mix briefly on low speed with a mixer.

Add about half of the flour and mix briefly.
Add the yogurt and mix briefly on low speed.
100 ml Greek yogurt
Add the espresso and mix briefly.

Add the mashed bananas to the bowl and the rest of the flour and mix only until combined - stop mixing when you still see remnants of flour and then just fold the batter with a spoon.
Transfer the dough to the prepared baking pan.
Step 3 - baking the cake
Place the pan with the cake into the preheated oven and bake for about 30 minutes - until a dry stick (skewer) comes out clean.
After baking, cool the cake completely.
Step 4 - preparing the coffee mascarpone cream
Transfer the cream ingredients to a bowl and mix them together at high speed.
250 g mascarpone cheese, 150 ml heavy cream, 1 teaspoon instant coffee, approx 30 g powdered sugar
Mix until you get a thick and stable cream - about 2-3 minutes.
Spread the cream over the cooled cake.
