How to make coffee banana cake step by step?

    Step 1 – preparations

    • Take out the eggs, butter, and yogurt from the fridge earlier to warm up to room temperature.

    • Line the baking pan with parchment paper or grease with butter and sprinkle with flour or breadcrumbs.

    • Peel the bananas and mash thoroughly with a fork.

    • Mix together the dry ingredients for the cake (except for sugar).
      300 g wheat flour, 1 teaspoon baking soda, 0,5 teaspoon salt, 1 teaspoon cinnamon

    • Brew the coffee and set aside to cool slightly.
    • Turn on the oven to heat to 170℃ (fan-forced) or 180℃ (top/bottom heat mode).

    Step 2 – preparing the coffee banana cake

    • Add the mashed bananas to the bowl and the rest of the flour and mix only until combined – stop mixing when you still see remnants of flour and then just fold the batter with a spoon.

    • Transfer the dough to the prepared baking pan.

    Step 3 – baking the cake

    • Place the pan with the cake into the preheated oven and bake for about 30 minutes – until a dry stick (skewer) comes out clean.
    • After baking, cool the cake completely.

    Step 4 – preparing the coffee mascarpone cream

    • Transfer the cream ingredients to a bowl and mix them together at high speed.
      250 g mascarpone cheese, 150 ml heavy cream, 1 teaspoon instant coffee, approx 30 g powdered sugar

Banana cakes and other banana bakes appear quite often at my place, because somehow these unfortunate bananas like to sit around. If you have the same problem and are tired of regular banana bread, then I suggest something completely different! This cake is subtly coffee-flavored, and served with an amazing cream. You’ll bake it in a large baking pan, so you can divide the cake into many portions. It will therefore be ideal, for example, for a garden party or a family occasion. Or as a weekend cake. You must try it!

    What ingredients are needed to make coffee banana cake?

    To make this banana cake with coffee at home, besides bananas, of course, you will need a few other ingredients, but they are very easy to get in any store, or you may even have them all at home already. Below is a shortened list of products I used and possible substitutes.

    • butter – I use extra butter with 82% fat content; you can optionally substitute it with mixed butter or vegetable butter
    • baking soda – if you don’t have baking soda at home, you can use baking powder, but then take about 2.5 slightly heaped teaspoons – baking soda is stronger than powder and much less of it is used
    • powdered sugar – I like to use powdered sugar for mixing butter because then the mixing takes less time and the mixture is nicer; if you don’t have powdered sugar, use regular sugar, but then mix it with the sugar longer – sometimes even 10 minutes!
    • Greek yogurt – use natural Greek yogurt – it can also be low-fat; instead, you can also use natural skyr, thick natural yogurt, or thick cream – preferably around 9-12%
    • mascarpone cheese – you can get this Italian cheese in any Lidl or Biedronka
    • coffee – I added strong espresso from a coffee machine to the cake; you can also prepare about 40 ml of strong instant coffee – use a teaspoon of coffee for 40 ml of hot water; if you don’t have powdered instant coffee to add to the cream, you can use cold espresso – then first blend it with the cheese alone, and then add the heavy cream and blend together
    • heavy cream – I used 30% fat UHT cream for the cream

    What if I forget to take ingredients out of the fridge earlier?

    If you want to start preparing the banana cake but your ingredients are cold, you can help yourself a bit. I transfer the butter to a mixing bowl for a very short time and heat it briefly in the microwave. Transfer the eggs to a bowl and cover them with hot water, leaving them for about fifteen minutes. You can transfer the yogurt to a bowl or cup and place it in a pot with hot water, or heat it very briefly in the microwave – do not heat for too long, as the yogurt may curdle!
