How to make a fluffy carrot cake
- Peel the carrots, slice them.about 350 g carrots
- Transfer them to a blender – add oil, eggs, and sugar – blend thoroughly.1 cup oil, 4 eggs , 200 g sugar
- Sift the flour through a sieve together with the baking powder.300 g wheat flour, 2 teaspoons baking powder
- Add to the wet ingredients and mix thoroughly.
- Pour the batter into a baking pan with a diameter of about 24-26 cm.
- Bake at 170 degrees (I baked with convection) for about 40-50 minutes – until a dry stick comes out.
- After baking, cool.

Today I have for you a recipe for a delicious and moist carrot cake from Brazil.
I really like carrot cakes – and my daughter absolutely loves them.
I like them for their simplicity, high moisture content, great color, and unusual taste.
That’s why there are already a few recipes for various carrot cakes on the blog.
This Brazilian carrot cake is definitely different from all other cakes – you must try it!

How to make Brazilian carrot cake – tips
First of all, we don’t use grated carrots here. Instead, we blend the carrots with the wet ingredients into a smoothie, and then add flour mixed with baking powder to it.
Thanks to this, the cake does not have the typical carrot cake consistency.
It looks more like a regular oil cake, but it has a wonderful, sunny color :)
Additionally, it is moist and stays fresh for a very long time.
You just need to remember that all ingredients should be at room temperature – otherwise, you might end up with a soggy cake!!!
Pour the batter into a prepared pan about 24 cm in diameter – I lined mine with baking paper, you can also grease it with butter and sprinkle with breadcrumbs or plain flour.
Bake the cake in an oven preheated to 180 degrees Celsius (top and bottom heat mode) or 170 degrees Celsius with convection for about 50 minutes. Towards the end of baking, be sure to check with a toothpick or a skewer if the cake is ready! Once the cake has completely cooled, sprinkle with powdered sugar.

What ingredients are needed to make Brazilian carrot cake?
To bake the cake, you will only need basic ingredients – I think you already have everything at home.
You will need a glass of oil, fresh carrots, wheat flour, baking powder, sugar, and eggs. And that’s it!
You can use flour type 450, 500, or 550 here.
I didn’t add walnuts, raisins, or any other dried fruits to this cake – despite that, the cake turned out delicious!
The preparation itself is very simple, so be sure to try the recipe!

How many calories does carrot cake have?
This carrot cake has about 340 kcal per 100 grams. I think that’s a very nice amount. Eating one slice of cake definitely won’t go straight to your hips.
How to store carrot cake?
You can store the cake at room temperature – on the kitchen counter. To prevent the carrot cake from drying out, it’s worth covering it with cling film or a glass cloche. You can also transfer the cake to an airtight container with a lid. In that case, the cake will be perfectly fine to eat for several days.

We don't grate the carrots; instead, we blend them together with oil and eggs in a blender. This makes the carrot cake fluffier and moister at the same time. And it has an amazing color. Another thing - we add practically no spices here. Usually, to carrot cake, we add at least cinnamon, sometimes also nutmeg and other warming spices. To this Brazilian carrot cake, we add nothing! And it still tastes delicious.
