- 200 g sugar ((1 cup))
- 2 teaspoons baking powder
- 0.5 teaspoon baking soda
- 1 teaspoon cinnamon (ground)
- 4 eggs (size L)
- approx. 300 g carrots ((3 cups) finely grated)
- 3/4 cup oil (180 ml)
pear mousse ingredients:
- 3-4 pears ( – mine weighed 780 g in total)
- 3 tablespoons lemon juice
- 50 g sugar ((1/4 cup) – or to taste)
- 120 ml heavy cream (well chilled – I used 30%)
- 2 teaspoons gelatin ( plus a little water)

How to make pear mousse for carrot cake
- It’s best to start by preparing the pear mousse.
- Peel the pears, remove the core, and dice the fruit.3-4 pears
- Transfer the pears to a saucepan, add sugar, lemon juice, and a little water – cook until the pears soften and break down.50 g sugar, 3 tablespoons lemon juice
- Blend the fruit, or mash it thoroughly with a fork – chill in the refrigerator (I made it the day before).
How to make carrot cake
- Blend together eggs, oil, and sugar.200 g sugar, 4 eggs, 3/4 cup oil
- Mix the flour with baking soda, baking powder, and cinnamon.300 g wheat flour – all-purpose, 2 teaspoons baking powder, 0.5 teaspoon baking soda, 1 teaspoon cinnamon
- Add the wet ingredients to the dry and mix.
- Add the grated carrots and mix with a spoon – if the batter is too thick, you can add a little milk.approx. 300 g carrots
- Line a baking pan approximately 20/30 cm in size with baking paper.
- Pour the batter into the pan.
- Bake at 180 degrees Celsius (top/bottom heat) for about 30 minutes – until a toothpick comes out clean.
- After baking, let it cool.
Carrot cake with pear mousse – finishing
- Finish the pear mousse.
- Whip the cold heavy cream until stiff, add to the chilled pears and gently mix.120 ml heavy cream
- Pour a little cold water over the gelatin. Once it swells, heat it briefly in the microwave or a double boiler – until it’s liquid.2 teaspoons gelatin
- Add 1-2 tablespoons of pear mousse to the gelatin and mix, then pour the entire mixture into the rest of the mousse and mix thoroughly.
- Spread the mousse over the cooled cake and smooth the surface.
- Chill the entire cake for 1-2 hours in the refrigerator.

I grate them on a fine grater – so that I get fine shreds. Carrots prepared this way are almost invisible in the cake after baking, but they give it moisture, color, and flavor.

How to make pear mousse for the cake?
First, prepare the pears themselves – you need to stew them in a saucepan until they soften and fall apart. Then you can additionally blend them or mash them thoroughly with a fork. Chill the prepared pears in the refrigerator for several hours – you can make them in the evening and chill them overnight in the refrigerator. Before serving the carrot cake, whip cold heavy cream until stiff, add the chilled pears and gelatin, and mix together. This is how a light-as-a-cloud pear mousse is created :)
