350 g wheat flour - all-purpose, 1 teaspoon baking soda, 0,5 teaspoon salt
Place butter, powdered sugar, and vanilla in a large bowl and beat until fluffy - I beat for about 3 minutes on the highest speed of the mixer.
200 g butter, 200 g powdered sugar, 1 teaspoon vanilla
To the beaten mixture, add one egg at a time and about a tablespoon of the mixed flour - briefly mix on low speed.

Add the rest of the flour in two to three batches and mix briefly - just until combined.
Place the bowl with the dough in the refrigerator for at least an hour - for the dough to firm up.
Step 2 - preparing the cookies
Preheat the oven to 180℃ and prepare two large baking sheets lined with parchment paper.
Scoop portions of dough with a large spoon - for me, about 50-55 g per cookie.
Roll the dough into balls in your hands.
Arrange the cookies on the baking sheet, leaving plenty of space between them (mine were a bit too close together and some stuck slightly during baking - so it's better to arrange them on two baking sheets).
Step 3 - baking the cookies
Place the baking sheets with cookies in the oven - if you're baking cookies on two sheets, place one closer to the bottom and the other closer to the top - set the baking time for about 12 minutes - after about 7-8 minutes, swap the sheets.
Immediately after baking, the cookies are still soft and delicate - do not move them, just leave them to cool!
Step 4 - preparing the caramel
Pour sugar into a heavy-bottomed saucepan or frying pan and start heating it - until it melts.
100 g sugar
When the sugar turns a light golden color, carefully add the butter - be careful, as the mixture may bubble up - stir until combined.
20 g butter
Carefully pour in the heavy cream - the mixture will bubble up - and stir until combined.
60 ml heavy cream
Remove from the heat and let cool slightly.
Step 5 - decorating the cookies
Pour caramel sauce over the cookies and immediately sprinkle with a pinch of salt - coarse-grained salt works best.
