How to make gingerbread-almond cake step by step
Step 1 - preparations
Grease the baking pan with butter and sprinkle with flour or breadcrumbs.
Preheat the oven to 180℃ (top/bottom heat) or 170℃ (fan-assisted).
Step 2 - preparing the gingerbread cake
Pour the dry ingredients into a large bowl and mix them with a whisk or spoon.
150 g all-purpose flour,
2 teaspoons baking powder,
1.5 teaspoons gingerbread spice,
100 g sugar
Add the wet ingredients to the bowl.
60 ml oil,
120 g Greek yogurt,
2 eggs
Mix everything thoroughly with a whisk or spoon.
Transfer the dough to the pan, level it.
Place in the oven and bake for 20 minutes.

While the gingerbread cake is baking, prepare the almond mixture.
Place the ingredients for the filling into a bowl.
100 g powdered sugar,
100 g butter,
100 g almonds,
2 egg
Mix thoroughly — you can also use a hand mixer for a smoother texture.
Step 4 – Bake the Cake with Almond Filling
After
20 minutes
, remove the cake from the oven and immediately spread the almond filling on top.
Sprinkle the top with almond flakes.

Return the pan to the oven and bake for another
15 minutes

Let the cake cool completely before serving.
