How to make New York cinnamon crumb cake step by step
Step 1 - preparations
Take out the products - butter, eggs, yogurt, and milk - from the refrigerator at least two hours in advance.
Line the baking pan with parchment paper, or grease it with butter and sprinkle with breadcrumbs or flour.
Preheat the oven to 170℃ (fan-assisted) or 180℃ (top/bottom heat mode).
Mix the flour with baking powder together (for the cake batter).
180 g wheat flour - all-purpose, 1.5 teaspoons baking powder
Step 2 - preparing the creamed cake batter
Transfer the softened butter to a bowl, add sugar, oil, and flavoring, and start mixing on high speed.
60 g butter, 2 tablespoons oil, 100 g powdered sugar, vanilla extract
Mix until the mixture becomes fluffy and light in color - for me, it usually takes three minutes.
Reduce the mixer speed to the lowest, add the egg, egg white, and about a tablespoon of flour mixed with baking powder - mix briefly just until combined.

Add yogurt and mix briefly.
80 g Greek yogurt
Add part of the remaining flour and mix briefly.
Add milk and the rest of the flour - stop mixing when there are still traces of flour visible on the sides.
60 ml milk
Then, just stir the batter with a spoon.
Transfer the batter to the prepared pan.
Step 2 - preparing the cinnamon crumble
In a bowl, mix the dry ingredients for the crumble topping.
200 g wheat flour - all-purpose, 130 g sugar, 1 tablespoon cinnamon
Add the melted butter and mix with a fork until a crumbly mixture forms.
140 g butter
Spread the crumble on top of the cake.
Step 3 - baking the cake
Place the cake pan in the preheated oven and bake for about 35 minutes - until a dry stick comes out clean.
After baking, cool the cake.
