- 100 g powdered sugar (⅔ cup)
- vanilla extract (or vanilla essence – to taste)
- 1 egg (size L – at room temperature)
- 1 egg white (from L egg – at room temperature)
- 180 g wheat flour – all-purpose (1 cup and 3 scant tablespoons)
- 1.5 teaspoons baking powder
- 80 g Greek yogurt (at room temperature)
- 60 ml milk (at room temperature)

- 200 g wheat flour – all-purpose (1⅓ cups)
- 130 g sugar (I used cane sugar – scant ⅔ cup)
- 1 tablespoon cinnamon
- 140 g butter (melted)

How to make New York cinnamon crumb cake step by step
Step 1 – preparations
- Take out the products – butter, eggs, yogurt, and milk – from the refrigerator at least two hours in advance.
- Line the baking pan with parchment paper, or grease it with butter and sprinkle with breadcrumbs or flour.
- Preheat the oven to 170℃ (fan-assisted) or 180℃ (top/bottom heat mode).
- Mix the flour with baking powder together (for the cake batter).180 g wheat flour – all-purpose, 1.5 teaspoons baking powder
Step 2 – preparing the creamed cake batter
- Transfer the softened butter to a bowl, add sugar, oil, and flavoring, and start mixing on high speed.60 g butter, 2 tablespoons oil, 100 g powdered sugar, vanilla extract
- Mix until the mixture becomes fluffy and light in color – for me, it usually takes three minutes.
- Reduce the mixer speed to the lowest, add the egg, egg white, and about a tablespoon of flour mixed with baking powder – mix briefly just until combined.1 egg, 1 egg white
- Add yogurt and mix briefly.80 g Greek yogurt
- Add part of the remaining flour and mix briefly.
- Add milk and the rest of the flour – stop mixing when there are still traces of flour visible on the sides.60 ml milk
- Then, just stir the batter with a spoon.
- Transfer the batter to the prepared pan.
Step 2 – preparing the cinnamon crumble
- In a bowl, mix the dry ingredients for the crumble topping.200 g wheat flour – all-purpose, 130 g sugar, 1 tablespoon cinnamon
- Add the melted butter and mix with a fork until a crumbly mixture forms.140 g butter
- Spread the crumble on top of the cake.
Step 3 – baking the cake
- Place the cake pan in the preheated oven and bake for about 35 minutes – until a dry stick comes out clean.
- After baking, cool the cake.

I recently found the recipe for this cake at Broma Bakery and was captivated by its simplicity and huge amount of crumb topping (of which I am a fan). The cake is baked in a smaller pan, so it will be ideal for fewer people or for a quick treat. Cinnamon added to the crumb topping gives the cake a nice aroma, so it’s worth not skipping it! The cake itself is soft, fluffy, and delicately moist. The top is covered with a crunchy, buttery crumb topping that perfectly complements the light cake. Be sure to try this recipe and save it for later!

What ingredients are needed to prepare this crumb cake?
To make this crumb cake at home, you will only need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- butter – the best will be extra butter with at least 82% fat content, but if you don’t have such butter, you can use mixed butter or vegetable baking butter
- sugar – for mixing butter with sugar, I used powdered sugar because it significantly simplifies the task, while for the crumb topping I used brown sugar; in both cases, you can also use regular sugar, but then it will take longer to properly mix the butter with sugar
- natural yogurt – I used thick Greek yogurt, you can also use regular natural yogurt, or sour cream – remember that it should be at room temperature!

Can fruit be added to the cake?
Yes, fruits like apples, raspberries, blueberries, or rhubarb go great with New York crumb cake. Cut larger fruits – like apples – into smaller pieces. First, place the cake batter into the pan, then add the fruit, and then the crumb topping. It may be necessary to extend the baking time slightly!

How to store crumb cake?
The cake is best stored covered at room temperature for several days. This way it will remain soft and fresh. So, after it has completely cooled, cover it or transfer it to an airtight container with a lid. If you bake this cake with fruit and it’s warm and humid at home, it’s better to store the cake in the refrigerator to prevent the fruit from spoiling.
You can also freeze the cake for about 3 months.
