- 6 eggs (size L)
- 300 g sugar (1.5 cups)
- 250 ml oil (1 cup)
- 450 g wheat flour – all-purpose (3 cups)
- 2 teaspoons baking powder
- approx 60 ml milk
- approx 800 g strawberries (cut into larger pieces)

- 150 g wheat flour – all-purpose (1 cup)
- 60 g sugar (less than 1/3 cup)

How to make strawberry and crumble cake step by step
Step 1 – whisking the eggs
- Start preparing the cake by thoroughly whisking the eggs with sugar – I whisk them at high speed for several minutes – until the mixture becomes very thick, significantly increases in volume, and turns light in color.6 eggs, 300 g sugar
Step 2 – add ingredients to the batter
- To the whisked eggs, add part of the flour mixed with baking powder and mix on low speed.450 g wheat flour – all-purpose, 2 teaspoons baking powder
- Start adding oil and the rest of the flour alternately until all ingredients are used – mix briefly on low speed and only until combined.250 ml oil
- Finally, add milk and mix briefly.approx 60 ml milk
Step 3 – transfer the batter to the tin
- Pour the batter into the prepared baking tin and spread evenly.
- Arrange the sliced strawberries on top.approx 800 g strawberries
Step 4 – prepare the crumble
- Transfer butter to a bowl, add flour and sugar.100 g butter, 150 g wheat flour – all-purpose, 60 g sugar
- Rub the ingredients together to form a crumbly mixture.
- Sprinkle the crumble over the strawberries.
Step 5 – baking the cake
- Place the tin with the cake in an oven preheated to 170 degrees Celsius (fan mode) and bake for about 45-50 minutes – until a skewer comes out clean – extend baking time if necessary.
- Cool the finished cake, and before serving, you can additionally sprinkle it with a little icing sugar.

Quick strawberry cake with oil – notes
Some time ago, we went on our traditional trip to the Bieszczady Mountains for the Butcher’s Festival. Unfortunately, this year I had to withdraw from the planned Butcher’s Marathon (52 km) due to an injury. However, my husband and friends ran there, so to speak, ‘as much as they could’ ;) Bartek completed a ‘slam’ this year – meaning three races – a 52 km marathon, an ultra – over 96 km, and a ‘rzeźniczka’ (Butcher’s Daughter) – 28 km – and that was day after day. I always bake some nice cake for such trips. This time I felt like having a fluffy cake with fruit, oil, and streusel. To give the guys strength, I baked this very strawberry cake with streusel. I wanted it to provide everyone with the necessary energy for long runs and at the same time not be too heavy to eat. Thanks to the large amount of strawberries, the cake gained a nice moistness, and the sweet streusel added exceptional crispiness. Moreover, this cake stayed fresh for a very long time and was soft and perfect to eat even after five days (I baked it on Tuesday, and we finished the last pieces on Sunday). That’s why I highly recommend this exceptional cake to you too!

Ingredients and substitutes necessary for baking strawberry cake
To bake this cake, you will only need very basic and generally available products (most – if not all – you probably already have at home). Below is a condensed list of the products I used and possible substitutes.
- wheat flour – I used type 500 flour here, but cake flour type 450 or 550 can also be used – you will need a total (including streusel) of 600 g of flour, which is 4 cups
- sugar – use regular granulated sugar, but powdered sugar can also be used – I added 300 g of sugar to the cake – if you prefer less sweet cakes, you can use a little less
- oil – I used a cup of rapeseed oil here, you can also use sunflower oil, or even melted coconut oil
- butter – butter will be essential for the streusel – mine was soft and at room temperature, but you can also use cold butter – then cut it into smaller pieces to make the streusel faster, you can also use vegetable butter
- milk – I used 1.5% UHT milk, you can substitute it with other milk, or a plant-based drink

Can you make cake with frozen strawberries?
Now is strawberry season, and it’s worth using fresh fruits, which are the tastiest right now. Outside of strawberry season, you can use frozen fruits – in that case, do not thaw them before use – but it’s best to choose smaller fruits. If you do thaw them, drain them of excess juice before adding them to the cake.
Can you make cake with strawberries without streusel?
Of course you can! This cake without streusel will be just as tasty, and it will also have fewer calories. Although I think that a calorie count of 280 kcal per 100 g (which is basically one slice of cake cut into 24 portions) is not so high that it needs to be further reduced :)

How to store strawberry cake with oil?
This strawberry cake with streusel is best stored outside the refrigerator. A kitchen counter (but not directly in the sun) is perfectly sufficient. To keep the cake fresh and soft for a long time, it’s worth keeping it covered or in an airtight container. Then it can easily last for several days. You can also freeze strawberry cake for about 3 months.
