How to make oat bread step by step
Step 1 - prepare dry ingredients
Pour flour into a large bowl, add oat flakes.
400 g wheat flour, 85 g oat flakes
Pour in seeds and salt - mix with a spatula.
2 teaspoons salt, approx. 30 g pumpkin seeds, approx. 30 g sunflower seeds, 2 tablespoons flaxseed
Step 2 - prepare the yeast for the bread
Mix honey in warm water - until dissolved.
360 ml water, 1 tablespoon honey
Crumble the yeast into a small glass or bowl - add a little honey water and mix.
15 g yeast
Pour the yeast into the bowl with flour and seeds.
Pour in the remaining honey water and mix everything with a spatula - the dough will be sticky.
Step 3 - dough rising
Cover the bowl with the dough with cling film or a towel and leave in a warm, draft-free place for 3 hours.
Step 4 - preparing the bread
Briefly stir the risen dough again with a spatula.
Grease the bread baking pan with butter and sprinkle with flour (if using a cast iron pot or Dutch oven, place it in the oven and preheat to 220 degrees Celsius in top/bottom heat mode).
Transfer the bread dough to the greased pan - and if baking in a pot, transfer it to a proofing basket or a clean bowl lined with baking paper.
Cover the bread and set aside for about 30-45 minutes to rise.
Step 5 - baking oat bread
Place the pan with the bread into the hot oven and bake for about 45 minutes.
If baking the bread in a pot, carefully remove the pot from the oven and transfer the bread into it along with the paper - place the pot back into the oven and bake as above.
You can also place an oven-safe dish filled with water at the bottom of the oven - thanks to its evaporation, the bread will get a nicely crispy crust.
Carefully remove the finished bread from the pan and cool on a wire rack.
