I invite you to try delicious oat bread with seeds. This is a very simple to prepare wheat yeast bread baked with the addition of oat flakes and crispy sunflower and pumpkin seeds. Plus flaxseed and sesame. I’ll add that this is a no-knead, no-work bread – just mix the bread dough with a spatula and let it rise. - 400 g wheat flour (preferably bread flour – type 650 or 720)
- 2 teaspoons salt
- 85 g oat flakes (1 cup)
- approx. 30 g pumpkin seeds (1/4 cup)
- approx. 30 g sunflower seeds (1/4 cup)
- 2 tablespoons flaxseed
- 15 g yeast (fresh)
- 360 ml water (lukewarm)
- 1 tablespoon honey

How to make oat bread step by step
Step 1 – prepare dry ingredients
- Pour flour into a large bowl, add oat flakes.400 g wheat flour, 85 g oat flakes
- Pour in seeds and salt – mix with a spatula.2 teaspoons salt, approx. 30 g pumpkin seeds, approx. 30 g sunflower seeds, 2 tablespoons flaxseed
Step 2 – prepare the yeast for the bread
- Mix honey in warm water – until dissolved.360 ml water, 1 tablespoon honey
- Crumble the yeast into a small glass or bowl – add a little honey water and mix.15 g yeast
- Pour the yeast into the bowl with flour and seeds.
- Pour in the remaining honey water and mix everything with a spatula – the dough will be sticky.
Step 3 – dough rising
- Cover the bowl with the dough with cling film or a towel and leave in a warm, draft-free place for 3 hours.
Step 4 – preparing the bread
- Briefly stir the risen dough again with a spatula.
- Grease the bread baking pan with butter and sprinkle with flour (if using a cast iron pot or Dutch oven, place it in the oven and preheat to 220 degrees Celsius in top/bottom heat mode).
- Transfer the bread dough to the greased pan – and if baking in a pot, transfer it to a proofing basket or a clean bowl lined with baking paper.
- Sprinkle the top of the bread with seeds.1 tablespoon pumpkin seeds, 1 tablespoon sunflower seeds, 1 tablespoon flaxseed, 1 tablespoon sesame seeds
- Cover the bread and set aside for about 30-45 minutes to rise.
Step 5 – baking oat bread
- Place the pan with the bread into the hot oven and bake for about 45 minutes.
- If baking the bread in a pot, carefully remove the pot from the oven and transfer the bread into it along with the paper – place the pot back into the oven and bake as above.
- You can also place an oven-safe dish filled with water at the bottom of the oven – thanks to its evaporation, the bread will get a nicely crispy crust.
- Carefully remove the finished bread from the pan and cool on a wire rack.

No-knead yeast bread with seeds – notes
It’s been a while since there was any homemade bread here – whether it’s loaves or rolls, so I decided to make up for it :) I invite you to try a very simple yet delicious no-knead bread baked with lots of crispy and healthy seeds. This recipe is very versatile, and you can freely change the amount and type of seeds added – depending on your preferences. After baking, the bread has a crispy crust and a flexible crumb. It stores well and stays fresh for several days. I found the bread recipe on Sally’s Baking Addiction blog – hers turned out more compact – it might be due to slightly different flour available there and here.

Ingredients and substitutes for preparing oat bread
To prepare this bread, you will need a few basic ingredients that you either already have at home or can easily get in any store. Below is a condensed list of products I used and possible substitutes.
- wheat flour – the best here is so-called bread flour, i.e., type 650 or 720. Type 650 flour can be easily bought, for example, at Lidl or Biedronka. You can also replace part of the flour with whole wheat flour, or use oat flour.
- yeast – I used fresh yeast here, which I dissolved in a small amount of lukewarm water; you can also use dried instant yeast – use a 7g packet – you don’t need to dissolve it in water, just pour it directly into the flour and mix.
- honey – if you don’t have honey, use regular sugar instead, or, for example, agave syrup.
- oat flakes – it’s best to use rolled oats or regular oats, but not instant. Oats help absorb the water added to the bread dough and give it structure.

How to bake bread in a Dutch oven?
If you have a Dutch oven but aren’t quite sure how to use it, read on to learn how to handle it. A Dutch oven is made of special clay and consists of two parts – the main pot and the lid. Before baking in the pot, you must first soak both parts in water. I place it in a plugged sink and pour water in. I leave the pot like that for at least 15 minutes so that the water soaks into the pot. During baking, this water will evaporate and give the bread a perfectly crispy crust.
Once your pot is soaked, transfer the risen bread into it and cover with the lid. Bake the bread at 220 degrees (covered) for about 30 minutes, then remove the lid and bake the bread for another 15-20 minutes – until the crust on top is browned.

How to store oat bread with seeds?
After baking, it’s best to cool the bread on a wire rack – so that it has air circulation. Give it at least 20 minutes to cool down, and then you can slice it. Such still-hot bread might be harder to slice, but after it has completely cooled, you won’t have any problems.
You can store the bread in a bread bin or on the kitchen counter – I usually place it in a bag so it doesn’t dry out.
