Shortcrust coffee mazurek – notes
Easter is getting closer, so today I have for you a recipe for an Easter cake – coffee mazurek. Mazurki are one of the popular cakes prepared specifically for Easter. They are usually shortcrust tarts with a sweet filling. But you can also find no-bake mazurki or yeast mazurki. On the blog, you will find several mazurek recipes – including a halva mazurek recipe or a poppy seed mazurek from grandma’s recipe. If you like poppy seed cakes, be sure to check out this grandma’s mazurek recipe! This time, I prepared for you a mazurek on a shortcrust base with a chocolate-coffee cream filling.

How to make coffee mazurek – tips
Preparing this cake is not difficult, and it’s quite quick. Prepare all the necessary ingredients – especially for the cream – mascarpone cheese, coffee, and chocolate. For the cream, I used instant coffee powder and blended it with mascarpone cheese and milk chocolate. I didn’t add any sugar to the filling – the sweetness of the chocolate was perfectly sufficient for me. For the cream, I used two slightly heaped tablespoons of coffee, and for me, the cream had a nice coffee flavor. Noticeable but not too overpowering. I suggest adding coffee to the cream gradually – until you achieve the taste that suits you.

How to make the mazurek base?
You can prepare the mazurek base in advance and store it in an airtight container, or wrapped in cling film. Here, I prepared a simple shortcrust base with a little powdered sugar for sweetness. Such a shortcrust base can easily sit for a while. Then, just before the holidays, all you need to do is prepare the cream and spread it on the cake.

How to store mazurek?
Store the coffee mazurek in the refrigerator, but it’s good to take it out half an hour before serving so that the shortcrust pastry warms up slightly. Then the coffee mazurek will practically melt in your mouth. Before serving, decorate it as you wish. I opted for small meringues – I crumbled a few of them and sprinkled them over the cake. Plus a little colorful sugar sprinkles. I also sprinkled the entire mazurek with instant coffee powder on top. This prepared mazurek tasted exquisite to me. I took it to guests, and everyone also loved it. So, if you are looking for a simple but WOW-effect Easter cake recipe, this mazurek is for you!

Easter Mazurek Recipe
Today, I have an Easter cake recipe for you. The traditional Polish mazurek appears on many festive tables. Typically, a mazurek consists of a shortcrust pastry base topped with a very sweet filling. On my blog, you can already find recipes for a dulce de leche (kajmak) and chocolate mazurek, as well as a lemon one. Now, a coffee mazurek with a chocolate-coffee cream is joining the collection.
This mazurek is incredibly simple to make and requires only basic ingredients. There was a time when mazurki weren't really my thing—I used to find them way too sweet and dry. But ever since I started baking them myself, I make sure they taste exactly how I like them: sweet, but not overly so, and melt-in-your-mouth delicious.
What should the base of a mazurek be like? Ideally, it should be made of shortcrust pastry so that it turns out light, not too thick, and melts in your mouth. To prepare the perfect shortcrust pastry for a mazurek, you need to chill the dough thoroughly. Once you've lined the baking pan with it, pop it back into the fridge. This ensures the butter in the dough gets very cold and won't melt too quickly while baking.
