Today I invite you to try this amazing shortcrust pastry with strawberries and vanilla pudding. I baked my strawberry cake in a large baking pan, so I could divide it into many portions. The preparation of the cake itself is very simple and does not require a mixer. You can knead the shortcrust pastry by chopping it with a knife or fork, then add cooked pudding and delicious, fresh strawberries. Such a shortcrust pastry with pudding and fruit will be perfect for the weekend, but you can also serve it as a dessert at a barbecue. Thanks to the combination of universal flavors, the pudding cake can also be served at various family celebrations – because it’s a perfect cake for children and adults. - 375 g wheat flour – all-purpose (2.5 cups)
- 1 teaspoon baking powder
- 200 g butter (cold)
- 1 egg (L – cold)
- approx 50 g sugar (1/4 cup – the cake is not very sweet)

- 2 packages vanilla pudding (40 g each)
- 750 ml milk
- 5 tablespoons sugar (- if you have unsweetened pudding)
- approx 500 g strawberries

How to make cake with strawberries and pudding
Step 1 – prepare the shortcrust pastry
- Line a baking dish of approximately 20/30 cm with baking paper.
- Preheat the oven to 180 degrees Celsius – top/bottom mode.
- Knead together flour, baking powder, butter cut into pieces, sugar, and egg – the dough may be crumbly – with a streusel-like consistency. If you want it more compact, add a little cold water and knead into a uniform ball.375 g wheat flour – all-purpose, 1 teaspoon baking powder, 200 g butter, 1 egg, approx 50 g sugar
- Spread approximately 2/3 of the dough into the baking dish.
- Carefully line the entire bottom with the dough.
- Pre-bake the dough for 15 minutes in the preheated oven.
Step 2 – prepare the pudding
- While the dough is pre-baking, prepare the pudding – pour about 700 ml of milk into a pot.750 ml milk
- Dissolve two puddings in the remaining milk – if you have unsweetened puddings, add sugar.2 packages vanilla pudding, 5 tablespoons sugar
- Pour the milk with the dissolved pudding into the pot.
- Cook together, stirring, until you get a thick pudding.
Step 3 – prepare the filling
- Wash and dry the strawberries, remove their stems, and cut larger fruits into quarters or halves.approx 500 g strawberries
- Spread the pudding over the pre-baked base (you don’t need to cool it beforehand).
- Place the strawberries on top of the pudding.
- Finally, sprinkle the remaining dough over the fruit.
Step 4 – bake the cake with strawberries and pudding
- Place the baking dish with the cake into the oven and bake for about 40-50 minutes – until nicely browned on top.
- Cool the baked cake – at first, the hot pudding will be quite loose, but as it cools, it will become firmer and it will be easier to cut nice slices.
- You can additionally refrigerate the cake.
- Before serving, you can sprinkle the strawberry cake with powdered sugar.

Shortcrust pastry with strawberries and pudding – notes
Strawberry season is slowly starting, and I can’t wait for our Polish strawberries. For now, I’m using what’s available and baking various cakes. This time I made this delicious shortcrust cake with strawberries and vanilla pudding. The cake is light and, as you can see from the calories – low-calorie, you could say it’s a fit cake with strawberries and pudding :)
Earlier, I baked us shortcrust pastry with strawberries and rhubarb and we loved it. This version of the cake with pudding is just as delicious and I can recommend it wholeheartedly!

Can you make shortcrust pastry with frozen strawberries?
Fresh strawberries are quite readily available now, so it’s worth using them, as they are much tastier than frozen ones. After the season, you can make this cake with frozen strawberries. However, I recommend thawing them first and draining excess juice in a sieve.
Besides, you can also make this pudding cake with other seasonal fruits. Then, you can bake shortcrust pastry with fruit and pudding practically all year round. Blueberries, raspberries, or our Polish wild berries would work great here, for example. If you like peaches, they’ll also be super – just dice them and sprinkle them over the pudding.

Cake with strawberries, pudding and jelly
If you want to make a more interesting strawberry cake with jelly, you can use this recipe. In that case, use the entire shortcrust pastry for the base and bake it with just the pudding. Then, arrange fresh strawberries on the baked cake and pour setting strawberry jelly over them. Additionally, place the cake form in the refrigerator for the jelly to set completely.

What kind of pudding for strawberry cake?
I highly recommend vanilla or cream pudding here. I had pudding with sugar already added, so I didn’t add sugar to the pudding I was preparing. If you have sugar-free pudding (look for pudding to prepare with 500 ml of milk), you must add sugar during preparation. You can also prepare this cake with strawberries and strawberry pudding or another flavor. It depends on your taste preferences.

How many calories does shortcrust pastry with pudding and strawberries have?
In the table below the recipe, I provided the caloric value and nutritional components for 100g of the cake. If you divide the cake into 24 roughly equal pieces, each will have about 169 calories (carbohydrates – 16g, protein 3g, fats – 8g). So, as I wrote earlier, it’s a fit cake with strawberries and pudding :) You can eat it without guilt :)
