- 150 g butter
- 200 g sugar (1 cup)
- 2 eggs (size L)
- 60 g dark cocoa (3/4 cup)
- 65 g wheat flour – all-purpose (almost 0.5 cup)
- 1 pinch salt

- approx 50 g powdered sugar (1/3 cup – or to taste)
- 1 tablespoon vanilla pudding (powder)
- approx 80 g strawberries (blended)
- approx 200 g strawberries (chopped)

How to make brownie with strawberries and mascarpone step by step
Step 1 – prepare the brownie batter
- Melt the butter in a large pot.150 g butter
- Add sugar to the hot butter and mix thoroughly.200 g sugar
- Add one egg at a time to the pot and mix vigorously.2 eggs
- Add cocoa, flour, and salt and mix until combined.60 g dark cocoa, 65 g wheat flour – all-purpose, 1 pinch salt
- Spread almost all of the batter onto the bottom of a baking pan lined with parchment paper – leave a little for the top.
Step 2 – prepare the strawberry cheesecake filling
- Transfer the mascarpone to a bowl, add powdered sugar and pudding powder.250 g mascarpone cheese, approx 50 g powdered sugar, 1 tablespoon vanilla pudding
- Mix everything thoroughly.
- Add the blended strawberries and mix thoroughly.approx 80 g strawberries
Step 3 – finishing the brownie
- Spread the strawberry filling over the chocolate batter.
- Drizzle the remaining chocolate batter over the mascarpone filling.
- Gently swirl the batters together to create “swirls”.
- Finally, sprinkle the top of the brownie with chopped strawberries.approx 200 g strawberries
Step 4 – baking the brownie with strawberries
- Place the brownie pan into an oven preheated to 180 degrees (top/bottom heat mode) and bake for about 45 minutes.
- After baking, cool the cake, but you can serve it still slightly warm :)

Brownie cake with mascarpone and strawberries – notes
I love brownie cakes for their very simple and quick preparation and deep chocolate flavor. I got the idea for today’s brownie from Sally – she made a version with raspberries, and I chose strawberries here. I also slightly changed the recipe – primarily, to reduce the cake’s calorie content, I didn’t add an additional 200 g of chopped chocolate. The brownie itself, thanks to the use of a large amount of bitter cocoa, already had a very deep and intense chocolate flavor. I decided that I didn’t need that extra chopped chocolate for a stronger taste, and you know – a less caloric cake will always be better than a more caloric one ;) So if you like such moist, rich chocolate cakes, be sure to try this recipe for brownie with cocoa and strawberries.

Ingredients and substitutes for preparing chocolate cake with strawberries
To prepare this brownie, you will only need a few basic ingredients readily available in any store – and certainly in discount stores like Biedronka or Lidl. Below is a shortened list of the products I used and possible substitutes.
- cocoa – you need bitter cocoa here (e.g., Decomorreno), it can be regular or defatted
- butter – the base of brownie cake is butter, which needs to be melted; you can replace it with vegetable butter, or as a last resort, oil
- mascarpone – for the cheesecake layer, I used mascarpone cheese; you can replace it with full-fat quark for cheesecakes, or Philadelphia-type cream cheese, or natural cream cheese
- pudding – for preparing the strawberry cheesecake, I added 1 tablespoon of vanilla pudding powder; if you don’t have pudding, add 1 tablespoon of wheat flour to the cheesecake mixture instead
- strawberries – I used fresh strawberries here; out of season, you can use frozen strawberries – thaw those added to the cheesecake mixture beforehand and drain excess water; you can use frozen ones for the topping – you can try to cut them into smaller pieces.

How to store brownie cake with strawberries and mascarpone?
After baking, the cake can safely stay out. However, if it’s not eaten on the first day, it’s worth putting the leftovers in the fridge – especially if it’s hot. This will ensure the brownie stays fresh and tastes great for longer.
You can also freeze this brownie – transfer the sliced cake pieces to a freezer bag and put them in the freezer. It can stay there for about 3 months.

How many calories does strawberry brownie have?
In the table below the recipe, I stated that 100 g of chocolate cake with strawberries and mascarpone has approximately 334 kcal. If you cut the cake into 16 roughly equal portions, each piece will have about 230 kcal (carbohydrates – 20 g, proteins – 3 g, fats – 15 g). I provide approximate calorie content based on the products I used.
If you decide to add extra chopped bitter chocolate to the brownie, the cake’s calorie content will, of course, increase.
