If you like baking your own bread at home, you absolutely must make this bread with added buttermilk.

- 15 g yeast (fresh, or a packet of dried)
- 1 teaspoon sugar
- 60 ml water (lukewarm – 1/4 cup)
- 250-360 ml buttermilk (- lukewarm – 1-1.5 cups)
- 500 g wheat flour (bread flour, can be replaced with some whole wheat flour)
- 1.5 teaspoons salt
- seeds (e.g., sunflower – optional)

How to make wheat bread with buttermilk
- Put the yeast into a cup, add sugar and lukewarm water – mix and set aside in a warm place for about 10 minutes.15 g yeast, 1 teaspoon sugar, 60 ml water
- Meanwhile, lightly heat the buttermilk until it is lukewarm.250-360 ml buttermilk
- Into the mixer bowl, add flour (I used 100 g of whole wheat flour and 400 g of bread flour), salt, and one cup of buttermilk.500 g wheat flour, 1.5 teaspoons salt
- Pour in the yeast starter and knead the dough on low speed in the mixer.
- If needed, add the rest of the buttermilk – I used whole wheat flour, so I needed more buttermilk in the dough.
- Finally, add the seeds – if you are using them – and mix briefly (I added 50 g of sunflower seeds and the calorie count includes them).seeds
- Cover the bowl with the bread dough with a cloth and set aside in a warm place for about an hour.
- After this time, briefly mix the dough again and transfer it to the prepared pan (greased with butter and floured or lined with baking paper).
- Cover the pan with the bread and set aside for about 30 minutes, so that the bread rises.
- Meanwhile, preheat the oven to 230 degrees (top/bottom heat mode).
- Place the bread in the oven and bake for 15 minutes (if you want the bread to be crispier, place an oven-safe dish with water at the bottom of the oven).
- After 15 minutes, reduce the temperature to 200 degrees and bake the bread for another 30 minutes.
- After baking, carefully remove the bread from the pan and cool on a wire rack.

Homemade buttermilk bread – notes
I very rarely buy bread in a store, because for many years I have preferred to bake it myself at home.
Baking bread is not difficult and anyone can handle it.
To make it at home, you don’t need any special equipment or ingredients. A regular mixer with a dough hook, a baking pan, and an oven are enough.
The simplest bread is wheat yeast bread. You don’t need sourdough for it, and its preparation is very similar to preparing yeast dough.
I recently made this very yeast buttermilk bread for us. I replaced the water, which is usually added to bread, with buttermilk. Thanks to it, the crumb turned out different from traditional bread. The inside was softer and lighter, and the crust was crispy. You must try it!

How to make wheat bread with buttermilk – tips
First, prepare the yeast starter. I like to use fresh yeast – so I mix it with a little sugar and lukewarm water. You can also use dried yeast here – in that case, use one 7g packet and add the yeast directly to the flour – mix it with the flour before adding the wet ingredients.

What flour for bread?
Regular wheat bread flour type 720 or 650 is sufficient here. For one loaf of bread, you will need half a kilogram of flour. I replaced part of the flour with whole wheat flour – I used 100g of it.
Besides flour, you will, of course, need buttermilk. It’s best if it’s lukewarm, or at least at room temperature. If you have it straight from the fridge, heat it briefly! in a pot or microwave. The buttermilk should only be warm, not hot! While kneading the dough, first add one glass of buttermilk and then add more if needed. I added more buttermilk – about 1.5 glasses in total – due to the use of whole wheat flour. It absorbs more liquids, so you need to add a bit more.
The bread dough should be thick, but not hard.
You can “enrich” wheat yeast bread by adding various seeds to the dough. I added sunflower seeds. I also recommend pumpkin seeds, or if someone likes it – nigella seeds.
If you want the bread to have a crispier crust, I recommend placing an ovenproof dish with water at the bottom of the oven. It will steam during baking and provide just such a delicious and crispy crust :)
