- 75 g butter (melted)

- 150 g sugar (3/4 cup)
- 60 g butter (softened)
- 2 eggs (size L)
- 1 egg yolk

- 1 kg quark cheese (for cheesecakes from a bucket – good fatty one – I recommend Piątnica, Mój Ulubiony)
- 1 can sweetened condensed milk (I used Gostyń)
- 4 eggs (size L)
- 1 package lemon jelly powder (package for half a liter of water)
- 2 tablespoons lemon juice

- 250 ml heavy cream (very well chilled)
- lemon curd
- 2 teaspoons gelatin (+ a little water)

How to make lemon curd
- Wash and dry the lemons thoroughly. Roll them several times on the counter, pressing down to soften them.2 lemons
- Grate the zest and squeeze the juice from them.
- Place the zest, lemon juice, sugar, and butter in a heatproof bowl (e.g., metal) and set it over a pot of boiling water.150 g sugar, 60 g butter
- Heat until the sugar and butter dissolve.
- In a bowl, whisk the eggs and egg yolk with a fork.2 eggs, 1 egg yolk
- Add the eggs to the bowl and cook, stirring constantly, until the mixture thickens and becomes velvety smooth.
- Strain the finished cream through a sieve to remove any lemon or egg pieces.
- Set aside to cool.
How to make a cookie crust for cheesecake
- Blend the sponge cakes into a powder, or crush them very thoroughly – e.g., with a rolling pin.about 150 g sponge cakes
- Add the melted butter and mix.75 g butter
- Line the baking pan with baking paper.
- Spread the sponge cakes on the bottom and press down firmly.
How to make lemon cheesecake step by step
- In a mixer bowl, put the quark cheese, add eggs, sweetened condensed milk, lemon juice, and pour in the jelly powder – blend until combined.1 kg quark cheese, 1 can sweetened condensed milk, 4 eggs, 2 tablespoons lemon juice, 1 package lemon jelly powder
- Pour the cheesecake mixture onto the sponge cake base.
- Place in an oven preheated to 150 degrees Celsius (top/bottom mode) and bake for about 1.5 hours.
- After baking, turn off the oven, slightly open the door, and leave the cheesecake inside to cool.
- Refrigerate the cheesecake to chill.
How to make lemon mousse for cheesecake
- Whip the cold heavy cream until thick.250 ml heavy cream
- Add roughly half of the lemon curd and gently mix – taste it, if you want, add more lemon curd.
- Pour a little cold water over the gelatin – just enough to cover it – mix and let stand for 5 minutes.2 teaspoons gelatin
- Briefly heat the gelatin – I do it in the microwave – usually less than 10 seconds.
- Add a tablespoon of cream to the heated gelatin and mix.
- Pour the prepared gelatin into the rest of the lemon mousse and mix thoroughly.
- Spread the mousse over the cheesecake, smooth the surface, and put it back in the refrigerator for at least an hour.
- Before serving, decorate the cheesecake with the remaining lemon curd.

Lemon cheesecake with lemon curd – notes
Today I have for you a recipe for lemon cheesecake with lemon mousse and lemon curd. So, one could say it’s a triple lemon cheesecake. We have a velvety and creamy lemon cheesecake with the addition of lemon jelly (yes, yes – jelly), plus a delicious lemon cream (i.e., lemon curd) and lemon mousse on top. This is a wonderful and super refreshing cheesecake that looks amazing and tastes even better. I must say, this cheesecake particularly appealed to me, and I think I ate half of it myself. For the photos, I baked the cheesecake in a 16 cm diameter pan (which is exactly half of the ingredients I provided in the recipe).

How to make lemon cheesecake with mousse – tips
You will need lemon curd for it, which is lemon cream. In the recipe, I described how to make lemon curd step by step, and I also took a few photos. I think preparing this lemon cream will not cause you any problems. For the cheesecake itself, instead of sugar, I used sweetened condensed milk, so be sure to buy a can of it. I usually have a spare one at home because I use it surprisingly often – for example, for homemade Baileys. I added lemon curd to the whipped cream mousse.

How to make lemon mousse for cheesecake?
To make the lemon mousse more stable, I added a little gelatin to it. It’s best to pour a small amount of cold water over the gelatin and heat it once it swells. You can heat it in a water bath or in the microwave. Just be careful not to overheat it, as overheated gelatin can lose its gelling properties! Add lemon curd to the whipped cream to taste – for me, it was roughly half of the cream. What was left I later used to decorate the chilled cheesecake.

How to decorate lemon cheesecake?
I decorated my lemon cheesecake before serving with small meringues and lemon slices. You must admit that it looked very fresh and spring-like thanks to this. Be sure to bake this lemon cheesecake for holidays or other occasions.

Aside from a good quality twaróg (bakers' cheese), you will need sweetened condensed milk. This serves a double purpose—it replaces the sugar and infuses the cake with a wonderful flavor. Cheesecake with condensed milk is simple and delicious, making this variation well worth a try.
How do you bake a cheesecake so it doesn't sink? The secret lies largely in how you bake it. I always bake my cheesecakes at a lower temperature (150°C / 300°F) using the conventional top/bottom heat setting (convection/fan-forced mode isn't great for cheesecakes). I usually bake the cheesecake for about 1.5 hours, and once it's done, I leave it in the oven with the door slightly ajar so it can slowly come to room temperature. This technique allows me to bake a cheesecake that doesn't sink :)
