No-bake Baileys Liqueur Cheesecake Recipe
I invite you to try a delicious no-bake Baileys cheesecake. I made this no-bake cheesecake on a base of crushed biscuits mixed with melted butter. To this, a cheesecake mixture with sweetened condensed milk and Baileys liqueur. Finally, I sprinkled my cheesecake with chocolate and decorated it with whipped cream. The cheesecake turned out amazing, and I can recommend it wholeheartedly.

- 1 can sweetened condensed milk (- about 530 g – I used Gostyń)
- 120 ml Baileys liqueur
- 250 ml heavy cream (- I used 30%)
- approx 30 g gelatin (- 7 slightly heaped teaspoons)
- water (for gelatin – about 60-70 ml)

How to make Baileys cheesecake
- Blend or crush the biscuits into a fine powder.approx 235 g biscuits
- Add butter to the biscuits and mix until combined.approx 65 g butter
- Pour the biscuits into the prepared pan (mine was lined with baking paper) and press firmly onto the bottom.
- Transfer the quark cheese to a large bowl, add sweetened condensed milk, heavy cream, and liqueur – blend until smooth.1 kg quark cheese for cheesecakes , 1 can sweetened condensed milk
- Pour cold water over the gelatin and let it sit for a few minutes to swell. Then heat it briefly (e.g., in the microwave).approx 30 g gelatin, water
- Add a tablespoon of the cheesecake mixture to the liquid gelatin and mix.
- Pour the gelatin into the rest of the cheesecake mixture and mix thoroughly.
- Pour the cheesecake mixture onto the biscuit base.
- Refrigerate the cheesecake until set – for several hours.
- Before serving, remove the cheesecake from the pan and decorate as desired.

No-bake Baileys Liqueur Cheesecake – notes
I recently made us such an appetizing no-bake cheesecake, and since it turned out so delicious, I absolutely have to share the recipe here.
The cheesecake itself is very simple and quick to make. It requires few ingredients, which are very easy to find in a store. Below I will present a list of the main ingredients and my notes on them.

What ingredients are needed to make Baileys cheesecake?
I made my cheesecake on a base of crushed biscuits – I used plain shortbread biscuits here. But instead of them, you can also use shortbread cookies – even homemade ones.
For the cheesecake itself, I used the following products:
- quark/curd cheese – for this no-bake cheesecake, I recommend good quality bucket quark. Good quality means full-fat! The quark should be thick and almost difficult to remove from the bucket. Here, as usual, I recommend Piątnica quark, or for example, Mój ulubiony.
- condensed milk – here I used sweetened milk, and that’s why I didn’t add any sugar to the cheesecake mixture. The sweetness from the milk was completely enough for me. I used Gostyń milk, whose can weighs 530 g.
- whipping cream – I used 30% cream from a carton – liquid. If you use 36% cream, remember that the calorie content of the entire cheesecake will slightly change.
- Baileys liqueur – I added my homemade Baileys liqueur to my cheesecake, because I had just recently made another bottle of it. Of course, the original liqueur will be perfectly suitable here. And if you can’t get it, or it’s too expensive for you, buy a cheaper coffee liqueur – the cheesecake will be just as tasty with it.
- gelatin – I used powdered gelatin – there are a lot of liquid ingredients in the cheesecake, so I used more gelatin than usual here

How to make Baileys Liqueur Cheesecake – tips
This Baileys cheesecake is a no-bake cheesecake. Its preparation is limited to blending all ingredients until smooth and finally mixing with dissolved gelatin. It is the gelatin added to the cheesecake that gives it a firm consistency and makes it possible to cut into pieces.
How to prepare gelatin for no-bake cheesecake?
I pour the gelatin powder into a glass and cover it with cold water, stir, and leave it for a few minutes to swell. Only then do I heat the swollen gelatin until it becomes liquid.
It’s better not to pour hot water over gelatin immediately, and especially not boiling water, because it can overheat the gelatin and it will lose its gelling properties. Therefore, heating gelatin only takes a moment – I heat it in the microwave in bursts of about 10 seconds. When I see that it’s becoming liquid, I immediately take it out and stir.
How to heat gelatin without a microwave? You can heat it in a bain-marie, or place a glass with gelatin into a pot of boiling water and stir until it dissolves.

How to add gelatin to cheesecake?
For the gelatin to spread well in the cheesecake, it’s worth tempering it beforehand. How to temper warm gelatin? Just add a little cold cheesecake mixture to it and mix. Pour the thus cooled gelatin into the rest of the cheesecake and stir vigorously. Tempering the gelatin will prevent it from setting too quickly and forming ‘lumps’ in the cheesecake.

How many calories does no-bake Baileys cheesecake have?
As I stated in the recipe itself, 100 g of no-bake cheesecake has about 288 kcal. But… this is the value for 100 g; when dividing the cheesecake into 12 portions, one portion will have about 550 kcal (and that’s without decoration). So, keep that in mind when serving yourself a second slice of cheesecake ;)
Despite the rather high calorie content of the cheesecake, it’s worth preparing it, because Baileys cheesecake tastes excellent. If you prepare it for a family occasion or holidays, your guests will help you deal with those delicious calories :)
