Today I invite you to a poppy seed cake prepared a little differently. Usually for holidays (and not only) I bake yeast poppy seed cake, but this time I made a poppy seed cake on shortcrust pastry. This cake with a lot of poppy seeds and delicious dried fruit is baked on a shortcrust base with grated pastry on top. We have a poppy seed cake for a large baking sheet here, so it’s an ideal cake for holidays or various family occasions, as there will certainly be enough for everyone.   • 400 g wheat flour – all-purpose (- 2 and 2/3 cups)
  • 250 g butter (cold)
  • 2 eggs (- size L for me)
  • 60 g powdered sugar (- 3 tablespoons)

  • 400 g poppy seeds (ground)
  • 350 ml milk (hot)
  • 100 g butter (soft)
  • 200 g powdered sugar
  • 4 egg yolks (- from L size eggs)
  • 4 egg whites
  • 100 g candied orange peel
  • 50 g raisins
  • 50 g walnuts (chopped)
  • 25 g almonds (ground – can be replaced with semolina)
  • almond extract (- to taste – or other favorite extract)

How to make shortcrust pastry for poppy seed cake

  • Knead the dough from flour, butter cut into pieces, eggs, and powdered sugar – I mixed the ingredients with a food processor and then briefly kneaded it.
    400 g wheat flour – all-purpose, 250 g butter, 2 eggs, 60 g powdered sugar

  • Divide the dough into two portions – one larger than the other – approximately 2/3 and 1/3 of the dough.

  • Wrap the smaller portion in foil and put it in the freezer.
  • Press the remaining dough into the bottom of the baking pan (mine was lined with baking paper). Put the pan with the dough into the refrigerator while preparing the poppy seed filling.

How to make poppy seed filling for poppy seed cake

  • Pour hot milk over the poppy seeds and set aside to cool.

  • Beat the soft butter with sugar until fluffy.

  • Add egg yolks to the beaten butter and mix until combined.

  • Add the poppy seed mixture and mix briefly.

  • Prepare the dried fruits and nuts – you can, of course, use different ones than I did, or in different proportions.

  • Add the dried fruits/nuts and extract to the poppy seed mixture and mix.

  • Whisk the egg whites until stiff and then add them to the poppy seeds – gently mix.

  • Transfer the poppy seed mixture onto the shortcrust base.

  • Take the reserved dough out of the freezer and grate it on a large-hole grater. Sprinkle the grated dough over the poppy seed cake.

  • Bake the cake in an oven preheated to 180 degrees Celsius (top/bottom heat mode) for about an hour (until golden brown).
  • After baking, cool the cake.
Uwagi
If you are using unground poppy seeds, pour hot water over them and cook for about 30 minutes. After this time, drain them and grind them twice with a grinder. You no longer need to pour hot milk over them; just cool them and add them to the beaten butter.

I love poppy seed cakes and pastries with poppy seeds, I can’t pass by poppy seed buns, so my cake today was a hit for me! And how could it not be, with such a thick layer of poppy seeds :) It’s surprising that I haven’t baked a poppy seed cake on a shortcrust base until now. There was a cheesecake-poppy seed cake on shortcrust pastry, but there’s also a cheesecake layer there, so it’s not a “true” poppy seed cake. I always preferred baking yeast cakes with poppy seeds, because with my love for yeast buns, it’s a perfect combination. But I must admit now that poppy seed cake on shortcrust pastry is now a strong competitor for rolled poppy seed cake.

How to make poppy seed cake on shortcrust pastry – tips

I started preparing the poppy seed cake by making the shortcrust pastry. You can chop the ingredients for the dough with a knife and then knead it, or, like me, briefly mix it with a food processor. If the dough doesn’t want to stick together into a uniform ball, you can add a little cold water and knead it briefly. Wrap about 1/3 of the dough in a bag and put it in the freezer to chill thoroughly, and use the rest of the dough to line the bottom of the baking tin. Put the tin with the dough in the fridge to chill the dough, and in the meantime, prepare the poppy seed filling for the poppy seed cake.

How to make poppy seed filling for poppy seed cake?

To make it easier and quicker to prepare the poppy seed filling, I used ready-ground poppy seeds. You just need to pour hot milk over such poppy seeds and set aside to cool. However, if you don’t have ground poppy seeds and can’t buy them, use poppy seeds in grains. Pour hot water over the poppy seeds and bring to a boil – for about 30 minutes. After this time, drain them well and grind them twice. How to grind poppy seeds? A meat grinder is best for this. You can use one that attaches to the table, or an additional attachment for a mixer. Do not pour hot milk over these poppy seeds.

Can you make a poppy seed cake on a shortcrust base with ready-made poppy seed filling? Yes, you can – to make the poppy seed cake nicely tall, it’s worth making it with two cans of poppy seed filling.

What to add to poppy seed filling?

I added a package of candied orange peel to the poppy seeds, because I really like its taste in cake. In addition, a handful of raisins and chopped hazelnuts. To slightly “thicken” the poppy seed filling, I added ground almonds, but you can also use semolina instead. And finally, of course, almond extract – because I can’t imagine poppy seeds without almond extract. This is, of course, optional, not everyone has to like almond extract. You can also use orange or, for example, rum extract here.

How to make poppy seed cake on shortcrust base with crumble?

Do you prefer crumble instead of grated pastry? No problem, make a slightly thicker base from the entire dough (or line a slightly larger baking tin with it) and prepare a simple crumble. Prepare and mix together the following ingredients:

  • 100 g butter
  • 150 g wheat flour ((1 cup) )
  • 60 g sugar (a little over 1/3 cup)

Sprinkle the ready crumble over the poppy seed filling and bake the whole thing as in the recipe.

How long to bake poppy seed cake on shortcrust base?

I baked my poppy seed cake at 180 degrees Celsius in top/bottom heat mode for approximately one hour. When the top of the poppy seed cake was nicely browned, I took it out of the oven and let it cool.

Finally, you can sprinkle the top of the poppy seed cake with a little powdered sugar, or drizzle with icing.

How to make icing for poppy seed cake?

Just mix about a cup of powdered sugar with some wet ingredient – it can be water, milk, heavy cream, or even orange juice. It’s important to add the liquid spoon by spoon until you get a slightly liquid but at the same time thick consistency.
