Recipe for cake with Biscoff spread and Lotus biscuits
Bake with me today a super simple and quick Biscoff cake. This cake is baked with Biscoff cookie spread and crushed Lotus biscuits. What’s more, you can prepare this cake without using a mixer! The cake is baked in a small pan, so it’s perfect for a smaller number of people. Serve the cake with chocolate glaze and Biscoff spread to enhance its flavor even more. Simple Biscoff cake recipe step by step

- 150 g wheat flour – all-purpose (1 cup)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 30 g Lotus cookies (ground into powder – 4 cookies)
- 100 g sugar (1/2 cup)
- 60 g oil (1/3 cup)
- 40 g Biscoff cream (2 very heaped teaspoons )
- 120 g greek yogurt (1/2 cup – at room temperature)
- 2 eegs (size L – at room temperature)

- 50 ml heavy cream
- 50 g dark chocolate
- approx 20 g Biscoff cream (1 very heaped teaspoon )
- Lotus cookies (crumbled – optional )

How to make Biscoff cake with cookie cream step by step
Step 1 – preparations
- Grease the baking pan with butter and dust with flour, or line with baking paper.
- Preheat the oven to 170 degrees (fan-assisted) or 180 degrees (top/bottom heat mode).
- Blend or very thoroughly crush the Lotus cookies.30 g Lotus cookies
Step 2 – prepare the dry ingredients for the cake
- Sift together through a sieve wheat flour, baking powder, and salt.150 g wheat flour – all-purpose, 2 teaspoons baking powder, 1/4 teaspoon salt
- Add the ground cookies to the mixture and mix together.
Step 3 – prepare the wet ingredients for the cake
- Pour sugar into a bowl, add oil and eggs.100 g sugar, 60 g oil, 2 eegs
- Add Biscoff cream and Greek yogurt – mix together with a kitchen whisk.40 g Biscoff cream, 120 g greek yogurt
Step 4 – combine ingredients
- Pour the wet ingredients into the dry ones and mix thoroughly with a spoon or a whisk.
- Transfer the batter to the prepared baking pan.
Step 5 – bake the cake
- Bake the cake in a preheated oven for 30-35 minutes – until a wooden skewer comes out clean.
- After baking, let the cake cool.
Step 6 – decorate the cake
- Heat the heavy cream, and when hot, add the chopped chocolate to it – stir until the chocolate melts and you get a smooth glaze.50 ml heavy cream, 50 g dark chocolate
- Let the chocolate glaze cool slightly.
- Spread the chocolate over the top of the cake.
- Briefly heat the Biscoff spread to make it slightly runny (I heated it for 20 seconds in the microwave) and pour it over the chocolate.approx 20 g Biscoff cream
- Using a teaspoon, gently swirl the chocolate with the spread to create patterns.
- Finally, sprinkle the cake with crushed cookies.Lotus cookies

Lotus Cake with Biscoff Spread and Biscuits – notes
I found the Biscoff cake recipe on the Julie Marie Eats blog and decided to try it – especially since I had just bought a large jar of spread at Dealz :) The cake itself is incredibly simple and quick to prepare, even without using a mixer. A regular bowl and a spoon or whisk are perfectly sufficient. The cake is for a small baking pan – although I still divided it into 16 portions :) The only thing I changed was to forgo the buttercream frosting on top – I’m not a fan of such creams and wanted to reduce the cake’s calorie count a little. I opted for a simple dark chocolate glaze and a touch of Biscoff spread.
If you want to bake the cake in a larger pan, by multiplying the ingredients by 1.5, you can bake it in a pan approximately 24×24 cm.

What ingredients are needed to bake Lotus cake?
To bake the cake, you will need a few basic ingredients – and most importantly, of course, Biscoff cookie spread. As I wrote earlier, I bought a large jar at Dealz, but I know it’s not always available there. In such cases, I order the spread on Allegro. Lotus cookies, on the other hand, can be easily bought at Biedronka – they are always available there, and of course at Dealz – they are practically always there too. What else?
- yogurt – for me, it’s thick Greek yogurt – bought at Lidl in that huge package, you can substitute with regular plain yogurt, but it’s better to choose one of the thick ones – like Bakoma
- oil – for me, it’s rapeseed oil, but you can also use another oil, or even melted coconut oil or melted and cooled butter
- chocolate – for the top of the cake, I melted dark chocolate so that the cake wouldn’t be too sweet. If you prefer sweet cakes, you can use milk chocolate – but then melt it in a maximum of 25-30 ml of heavy cream and wait until it thickens before pouring it over the cake
- heavy cream – for me, it’s carton cream (Łaciata) with 30% fat content, you can also use another heavy cream, but choose a liquid one
How to vary Biscoff cake?
If you want to vary and enhance the taste of the cake a bit, you can also add some chopped chocolate or chocolate chips to the cake itself :)

How many calories does Biscoff spread cake have?
In the table below the recipe, I provided the calorie count for 100 g of cake (this is the calorie count when the cake is cut into 6 equal pieces). If you cut the cake into 16 roughly equal pieces, each of them will have approximately 167 kcal (I provide the calorie count based on the products I used).

How to store Biscoff cake?
If you want the cake to last longer, it’s best to transfer it to an airtight container with a lid. Then it won’t dry out and will stay soft and fresh longer. The cake can also be frozen for about 3 months.
