How to make protein banana bread step by step
Step 1 - preparations
Preheat the oven to 180℃ (top/bottom heat) or 170℃ (fan-forced - I use fan-forced).
Line the baking pan with parchment paper or grease it with butter and sprinkle with breadcrumbs.
Peel the bananas, transfer them to a large bowl, and mash thoroughly with a fork.

Step 2 - preparing the protein cake
Add the remaining wet ingredients - skyr and eggs - to the mashed bananas.
200 g natural skyr, 3 eggs
Mix them until combined.
Pour flour, baking powder, cinnamon, and protein powder into the bowl.
80 g protein powder, 125 g flour, 2 teaspoons baking powder, 0.5 teaspoons cinnamon
Mix briefly - just until combined.
Pour the mixture into the prepared pan.
Sprinkle the top of the cake with chocolate.

Step 3 – Baking the banana bread
Place the pan in the preheated oven and bake for about 35–40 minutes, until a toothpick inserted into the center comes out clean.
After baking, let the cake cool completely.
