How to make soft butter cookies in sugar
Step 1 - mix the butter
Transfer the soft butter to a mixing bowl, add powdered sugar and flavorings - vanilla and almond (if using).
120 g butter, 150 g powdered sugar, 2 teaspoon vanilla extract, 0.5 teaspoon almond extract
Mix everything together on high speed with a mixer for about 2 minutes (if using regular sugar instead of powdered sugar, mix for 3-4 minutes).
Step 2 - add remaining ingredients for the cookies
Add the egg to the creamed butter and mix on medium speed until combined.

Pour in the wheat flour and add leavening agents - baking soda and baking powder.
225 g wheat flour - all-purpose, 0.5 teaspoon baking powder, 0.5 teaspoon baking soda
Mix together on low speed with a mixer - just until combined - you can also thoroughly mix the dough with a spoon.
Step 3 - prepare the cookies
Scoop generous portions of dough with a spoon.
Roll balls of dough in your hands.
Coat each ball in granulated sugar.

Arrange the cookies in a larger mold and once all cookies are formed, place the mold with cookies in the refrigerator for half an hour - so that the cookies chill.
Step 4 - baking the cookies
While the cookies are chilling, preheat the oven to 180 degrees Celsius (top/bottom heat mode).
Line a large baking sheet from the oven with parchment paper.
Place the chilled cookies on the baking sheet - leave space between them, as they will spread during baking.
Bake the cookies for about 11 minutes - right after baking, they will still be soft on the outside - so let them cool for about 15 minutes first and only then remove them from the baking sheet.
