Prepare with me today super simple and quick soft butter cookies that melt in your mouth. These mixer-made cookies require only a dozen minutes of preparation. What’s more, they taste exceptionally good and will serve as a sweet dessert for children and beyond.   • 120 g butter (soft)
  • 150 g powdered sugar (1 cup)
  • 1 egg (size L – at room temp.)
  • 225 g wheat flour – all-purpose (1.5 cups)
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 2 teaspoon vanilla extract
  • 0.5 teaspoon almond extract (optional)
  • approx. 30-40 g granulated sugar (for coating the cookies)

How to make soft butter cookies in sugar

    Step 1 – mix the butter

    • Transfer the soft butter to a mixing bowl, add powdered sugar and flavorings – vanilla and almond (if using).

    • Mix everything together on high speed with a mixer for about 2 minutes (if using regular sugar instead of powdered sugar, mix for 3-4 minutes).

    Step 2 – add remaining ingredients for the cookies

    • Add the egg to the creamed butter and mix on medium speed until combined.

    • Pour in the wheat flour and add leavening agents – baking soda and baking powder.

    • Mix together on low speed with a mixer – just until combined – you can also thoroughly mix the dough with a spoon.

    Step 3 – prepare the cookies

    • Scoop generous portions of dough with a spoon.

    • Roll balls of dough in your hands.
    • Coat each ball in granulated sugar.

    • Arrange the cookies in a larger mold and once all cookies are formed, place the mold with cookies in the refrigerator for half an hour – so that the cookies chill.

    Step 4 – baking the cookies

    • While the cookies are chilling, preheat the oven to 180 degrees Celsius (top/bottom heat mode).
    • Line a large baking sheet from the oven with parchment paper.
    • Place the chilled cookies on the baking sheet – leave space between them, as they will spread during baking.

    • Bake the cookies for about 11 minutes – right after baking, they will still be soft on the outside – so let them cool for about 15 minutes first and only then remove them from the baking sheet.

    Quick soft cookies in sugar – notes

    I must admit that my butter cookies today are a real hit! I found the recipe on the American blog Browned Butter Blondie, but I slightly adapted it to Polish grammage and reduced the amount of sugar a bit (and even so, the cookies are, in my opinion, on the sweeter side). My son said these are the best cookies I’ve ever baked – nicely crispy on the outside and super soft on the inside. Although the recipe yields a small number of cookies – I got 11 pieces – they are very large cookies.

    Such soft cookies are perfect primarily for children – because they are easy to eat and don’t make a mess. You can pack them for a picnic, for a car trip (especially since summer and summer trips are ahead of us), or give them to children for school to eat a cookie during a school break. Among such softer cookies ideal for children, I can also recommend soft lemon cookies with colorful sprinkles – these cookies, thanks to their colors, are a real favorite with children.

    Ingredients and substitutes for preparing soft butter cookies

    To prepare the cookies, you will only need a few basic ingredients. Below is a condensed list and possible substitutes.

    • butter – for the cookies, you need 120 g of soft butter at room temperature – so take the butter out of the fridge about 2 hours in advance. I used extra butter with 82% fat content here; you can also use soft margarine if you prefer it over butter.
    • sugar – for creaming the butter, I recommend using powdered sugar – I used 1 cup of powdered sugar (150 g) here. Powdered sugar mixes with butter much faster than regular granulated sugar and provides a fluffier and more uniform mixture. If you don’t have powdered sugar, you can use regular granulated sugar (use 3/4 cup of it). In that case, you will need to mix the butter with sugar longer to achieve similar fluffiness and for the sugar to dissolve.
    • baking soda – for the cookies, I added both baking soda and baking powder, similar to the original recipe. Baking soda has a much stronger effect than baking powder, which is why it is usually used sparingly. If you don’t have baking soda, use a total of 2 flat teaspoons of baking powder.
    • flavorings – for flavor, I added vanilla extract and a touch of almond extract to the cookies. You can use just vanilla extract, or instead of extract, you can use an essence, or simply regular vanilla sugar – then mix it together with the butter (you can reduce the amount of regular sugar so that the cookies are not too sweet).
    • wheat flour – I used type 450 wheat flour here; you can also use type 500 or 550. You can use all-purpose flour.

    Preparation of butter cookies – tips

    You can prepare the cookie dough fastest by mixing it with a regular mixer. Thanks to the soft butter, it’s not difficult. I scooped the cookie dough with a large spoon, and these were quite generous portions – this way I got 11 very large cookies after baking. If you prefer slightly smaller cookies, you can scoop portions of dough not with a large spoon, but with a teaspoon.

    If you are baking smaller cookies, then be sure to reduce their baking time. With 11 minutes of baking, they might become more browned and their center won’t be as nicely soft. They will, of course, be tasty and edible, but harder. I think about 8 minutes of baking at 180 degrees Celsius should be enough. Also, remember that right after baking, the cookies will still be soft; do not remove them immediately from the baking sheet or move them. Once they cool, they will become harder and crispy on the outside.

    How to store soft butter cookies?

    Vanilla butter cookies are best stored in an airtight container at room temperature. You can transfer them to a container with a lid or a cookie tin. They will be great to eat for about 5-7 days. You can also freeze butter cookies. Place them in a freezer bag and store them in the freezer for about 3 months.
