How to make vegan snowball cookies
Mix together powdered sugar and vanilla with Eleplant cut into smaller pieces - mix until the mixture is nicely fluffy and light.
200 g Eleplant ,
80 g powdered sugar,
2 teaspoons vanilla extract
Then add the flour to the mixture in portions and mix only until the ingredients are combined.
250 g wheat flour - all-purpose
Place the bowl with the cookie dough in the refrigerator for about 30 - 40 minutes - to chill.
Take small portions of the chilled dough and roll them into balls in your hands.
Arrange the cookies on a prepared large baking sheet - keep small spaces between them.
Bake the cookies in an oven preheated to 180 degrees Celsius (top/bottom heat mode) for about 15 minutes.
After baking, let the cookies rest for 5 minutes, then coat each one in powdered sugar (the cookies must still be warm).

Once the cookies have completely cooled, coat them again in powdered sugar.
