- 250 g wheat flour – all-purpose (- 1 and 2/3 cups)

How to make vegan snowball cookies
- Mix together powdered sugar and vanilla with Eleplant cut into smaller pieces – mix until the mixture is nicely fluffy and light.200 g Eleplant , 80 g powdered sugar, 2 teaspoons vanilla extract
- Then add the flour to the mixture in portions and mix only until the ingredients are combined.250 g wheat flour – all-purpose
- Place the bowl with the cookie dough in the refrigerator for about 30 – 40 minutes – to chill.
- Take small portions of the chilled dough and roll them into balls in your hands.
- Arrange the cookies on a prepared large baking sheet – keep small spaces between them.
- Bake the cookies in an oven preheated to 180 degrees Celsius (top/bottom heat mode) for about 15 minutes.
- After baking, let the cookies rest for 5 minutes, then coat each one in powdered sugar (the cookies must still be warm).approx 150 g powdered sugar
- Once the cookies have completely cooled, coat them again in powdered sugar.

What are snowball cookies?
These small and charming cookies coated with powdered sugar are very popular in many countries around the world. I drew my inspiration for these cookies from American snowball cookies – which translates to ‘snowball cookies’. Snowballs, because the cookies resemble snowballs in their appearance and shape. They are small and round, and after baking, they are rolled in powdered sugar, which adds not only sweetness but also an interesting and charming look.
Such cookies are also very popular in Mexico, where they are known as wedding cookies, or even in Russia where they are called tea cookies. For me, they can be eaten at any time of year, but they probably look most delightful in winter. The recipe itself is incredibly simple, so be sure to try it!

What ingredients are needed to make snowball cookies?
To prepare these cookies, you only need four basic ingredients, which are readily available in stores. I made my cookies in a vegan version and used a vegan butter substitute – Eleplant. Besides fat, you will, of course, need powdered sugar, which is added to the cookie dough itself and then used to coat the cookies after baking. To add flavor, I recommend adding vanilla extract to the cookies; instead, you can also use, for example, orange extract to give them a more wintery taste.

What is Eleplant and where to buy it?
Eleplant is a great alternative to traditional butter – it tastes like butter, but it’s completely vegan and 100% made from plant-based ingredients. Among its ingredients, you’ll find cocoa butter and oat drink, but it contains no palm oil, lactose, or cholesterol. Therefore, if you’re looking for a healthy and tasty butter substitute, Eleplant will work perfectly. You can use it for baking, frying, cooking, or spreading on bread.
Where to buy Eleplant? You can find it in Lidl stores, as well as in larger supermarkets such as Kaufland, Auchan, Carrefour, and Leclerc. So be sure to look for it on your next shopping trip.

How to prepare vegan snowball cookies – tips
These snowball cookies are super simple to prepare, and most of the time will be spent chilling the dough in the refrigerator. A mixer will be useful for preparing the cookie dough, as Eleplant needs to be mixed with powdered sugar into a fluffy mass. This will ensure perfect cookies that hold their shape while practically melting in your mouth. Scoop portions of the chilled dough with a spoon and roll them into balls roughly the size of a walnut in your hands. The cookies will flatten slightly during baking but should still retain a spherical shape.
How to make the cookies look like snowballs? It’s important to double-coat them in powdered sugar. First, coat them immediately after baking when they are warm. Under the influence of heat, the powdered sugar will gently melt. Thanks to this, after cooling and re-coating in sugar, it will stick better to the cookies and form a thicker layer of sugar.

Can other flavor versions of snowball cookies be made?
Of course! First of all – as I mentioned earlier with the ingredients – you can use different flavorings here to give the cookies a different taste. Instead of vanilla, you can add a little lemon, orange, or even almond flavoring.
You can also add grated lemon or orange zest to the cookie dough itself. Nuts also work great here. You can finely chop about half a cup of nuts (e.g., hazelnuts or walnuts) and add them to the dough – mix and prepare round cookies. Children will surely love cookies prepared with colorful sugar sprinkles, which will create colorful specks in the cookies.

How to store snowball cookies?
You can store these vegan cookies for about a week in an airtight container. A cookie tin or a plastic box with a lid will work great here. If you have a large glass jar with a lid, place the cookies in it. This way, they will stay perfect for eating longer, and they will also make a beautiful decoration.
You can also freeze these vegan cookies. Place them in an airtight bag and put them in the freezer. They can stay there for about 3 months.
