How to make Welsh Cakes - fried Welsh cakes
Mix the flour with sugar, spices, and baking powder.
300 g wheat flour - all-purpose, 70 g sugar, 1 teaspoon baking powder, 1/2 teaspoon nutmeg, 1/4 teaspoon cinnamon, 1 pinch salt
Add cold lard and butter cut into pieces and mix or rub with your fingers.
60 g butter, 60 g lard
Add the egg and chopped raisins or cranberries to the dough and knead it - if necessary, add a little cold milk.
1 egg, 50 g raisins, 2-3 tablespoons milk
Wrap the dough in foil and chill in the refrigerator for at least half an hour.
Take the chilled dough out onto a floured surface, knead briefly, and roll out into a disc about half a centimeter thick.
Cut circles from the dough, knead the remaining dough again, roll out, and cut out more cookies.
Heat a frying pan over medium heat (I used a large non-stick pancake pan) - you can grease it with melted butter.
Fry the cookies for a few minutes on each side - be careful not to burn them.
Before serving, you can additionally coat them in sugar (if the cookies were fried without fat, I recommend first brushing them with a little milk and then sprinkling with sugar).

I cut out the cookies with a 6 cm diameter cutter and got a total of 28 cookies - in this case, one cookie had about 90 calories.
