Recipe for Welsh Cakes, i.e., pan-fried cakes
Today I have a recipe for you from English cuisine, or more precisely – Welsh cuisine. These are very simple and quick Welsh cakes fried in a pan. They will be perfect for people who don’t have an oven but enjoy homemade baked goods. The fried cakes are served warm – e.g., for afternoon tea or breakfast, and for me, they are a combination of shortbread cookies and pancakes. They taste great and are not difficult to make. I think children will especially love them :) You can even pack these cakes for them for school as a second breakfast. I recommend them!

- 300 g wheat flour – all-purpose (- 2 cups + a little for rolling)
- 70 g sugar (fine, or powdered sugar)
- 1 teaspoon baking powder
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1 pinch salt
- 60 g butter (cold)
- 60 g lard (cold)
- 1 egg (size L)
- 50 g raisins (small or cranberries – half a cup)
- 2-3 tablespoons milk (cold)

How to make Welsh Cakes – fried Welsh cakes
- Mix the flour with sugar, spices, and baking powder.300 g wheat flour – all-purpose, 70 g sugar, 1 teaspoon baking powder, 1/2 teaspoon nutmeg, 1/4 teaspoon cinnamon, 1 pinch salt
- Add cold lard and butter cut into pieces and mix or rub with your fingers.60 g butter, 60 g lard
- Add the egg and chopped raisins or cranberries to the dough and knead it – if necessary, add a little cold milk.1 egg, 50 g raisins, 2-3 tablespoons milk
- Wrap the dough in foil and chill in the refrigerator for at least half an hour.
- Take the chilled dough out onto a floured surface, knead briefly, and roll out into a disc about half a centimeter thick.
- Cut circles from the dough, knead the remaining dough again, roll out, and cut out more cookies.
- Heat a frying pan over medium heat (I used a large non-stick pancake pan) – you can grease it with melted butter.
- Fry the cookies for a few minutes on each side – be careful not to burn them.
- Before serving, you can additionally coat them in sugar (if the cookies were fried without fat, I recommend first brushing them with a little milk and then sprinkling with sugar).

Fried Welsh Cakes from a Pan – Notes
Today I invite you to a nice and simple recipe, perfect when you don’t want to turn on the oven, or you don’t have access to one. In such a situation, you can make simple pan-fried cakes. Yes, yes – fried!
This is a recipe from Welsh cuisine, and I must say, it’s great.
I was in Wales once, and I must say, it’s beautiful, but their language made the biggest impression on me. We looked at all the signs written in Welsh and English and tried to twist our tongues reading the Welsh version :) I’m telling you, it was great fun.
But back to Welsh cakes. Most often, they are eaten warm during afternoon tea – exactly teatime. I ate my cakes both warm and completely cooled down, and either way, they tasted excellent.

How to Make Welsh Cakes from a Pan – Tips
The cakes are fried for a relatively short time, so don’t add regular granulated sugar – it won’t have time to dissolve – fine baking sugar will be best. If you don’t have any, you can briefly blend regular sugar to make it finer. As a last resort, you can use powdered sugar. Besides sugar, we use regular wheat flour here – it can be cake flour type 450 or 500.
These cakes are prepared with two fats – butter and lard. Both butter and lard should be well chilled and added to the flour in pieces. You can mix them with the flour or rub them in with your fingers like a crumble. Lard gives the cakes greater softness, so it’s better not to replace it with butter. Ultimately, you can use vegetable shortening instead, but I recommend lard more.
The Welsh also add small raisins called currants to their fried cakes. Such raisins are not very popular here and may be difficult to find. You can use regular sultana raisins instead – I recommend chopping them slightly so they are not too large. My children are not fond of raisins, so I used dried cranberries instead. I also chopped them into smaller pieces.

Spices add aroma to the cakes – a pinch of cinnamon and “mace”. I didn’t know what “mace” was, so I searched the internet and it turned out to be powdered nutmeg flowers. I haven’t seen such a spice anywhere in Poland, so I used a little ground nutmeg instead. It’s not the same, but oh well – it’s difficult.
The prepared dough for the cakes should be chilled in the refrigerator – about half an hour is enough.
Roll out the dough into a flat circle and cut out rounds – I cut them out with a 6 cm diameter cutter and got 28 cakes. You can also use a larger cutter or a glass.

How to fry Welsh cakes?
I fried my cakes on a large non-stick pancake pan. I didn’t grease it additionally with fat, but you can grease the pan with a little melted butter.
Fry the cakes over low/medium heat for about 3 minutes on one side – be careful not to burn them. Flip the cakes to the other side and fry for about 2 more minutes.
Slightly cool the finished cakes and serve them warm – for afternoon tea, or for a sweet breakfast :)
Before serving, you can additionally sprinkle them with sugar.
