Heat up the pan and lightly grease it with oil - I use a silicone brush.
Spoon one tablespoon of batter per pancake and leave space between them.
Reduce the heat under the pan to almost the lowest, you can also cover the pan with a lid and fry the pancakes for about 2 minutes - until small holes appear on the surface.
Then carefully flip the pancakes to the other side and fry them for about another minute.
Step 4 - coating the pancakes
Mix sugar and cinnamon in a bowl.
3 tablespoons sugar, 1 teaspoon cinnamon
Remove the fried pancakes from the pan and immediately coat them in sugar - if the sugar doesn't stick because the pancake is dry, place it on a plate and sprinkle with cinnamon sugar from above.
Fry the remaining pancakes until the batter is used up - I got 12 pancakes.
